Sean's Falafel and Cucumber Sauce

Fantastic! I had to make a couple of substitutions, since I'll be moving soon, and I didn't want to buy groceries. I used dried parsley (about 2 tablespoons) in place of the fresh and some ground up oats and whole wheat pancake mix (unsweetened) in place of the bread crumbs. I cooked it in my George Foreman grill (brushed with a little olive oil) and served it on pita with the cucumber sauce, a little hummus, and fresh spinach. I reheated the leftovers in my toaster oven and served them over a bed of spinach with mushrooms, cucumbers, tomatoes, and the yogurt sauce for a refreshing salad. I'll definitely make this again, and I bet it will be even better with the right ingredients!

Vegetarian Tortilla Soup

Wow! This is an excellent and very easy recipe. I'll definitely keep the ingredients on hand for this one! I did add a can of black beans for extra protien and some cayenne for an added kick. I tasted it before, though, and it was wonderful to begin with. Thanks for the great recipe.

Sweet Corn Cake

Fantastic! My friend and I have been wanting to find this recipe since devouring the Sweet Corn Tamale Cakes at Cheesecake Factory. Thank you so much for the wonderful recipe! We topped each serving with a little chopped cilantro, tomatoes, avocado, and a sour cream sauce (sour cream + adobo sauce from a can of chipotle pepper). They were fantastic!

Cheesecake Bars

Wow! I added a little cinnamon to the crust, and this was an awesome (and easy) recipe. I do think that I might double the filling next time, and there will definitely be a next time!

Awesome Green Beans

I'm a vegetarian, but this is one dish that I really miss from childhood. I decided to try this recipe using Boca brand vegetarian smoked sausage. I cooked it just like the recipe said, and it was fantastic! I only had about one pound of beans, so I halved the recipe and used two sausage links. Even if you're not a vegetarian, this is a great way to cut back on fat and calories. Thanks for the great recipe!
