Simple Baked Apples

Coconut Shrimp I

Awesome! My girlfriend requested them again only a week later. I used 3 Tbsp. mayo because I was out of eggs and I am going to continue to do so. Also, I used 1/2 lb. thawed 100-count shrimp instead of the big guys.

Spanish Chicken and Rice

My girlfriend made this for me and it came out great! She used pounded boneless breasts and omitted the pimentos. This is a dish that really tastes like homestyle Spanish cooking. Thanks!

Maple Dill Carrots

Yum! Exactly what I was looking for. I used 3/4 tsp. dry dill weed instead of the fresh stuff. My girlfriend thought it was too spicy so I may cut back on the pepper next time.

Pecan Pie III

Best pecan pie I've ever had, hands down. Per other reviews I added 3 Tbsp. melted butter and 1 Tbsp. flour. I don't keep corn syrup around so I just mix white sugar and spring water until I have a syrup (isn't that all corn syrup is?) Thanks for sharing!!

Italian Dressing Mix

A great Italian dressing--this is better than most brands you can buy. I cut the salt in half, used red wine vinegar and a mix of vegetable oil and olive oil instead of canola. Do your body a favor: don't use canola.

Honey Roasted Red Potatoes

These came out great! Per other reviewers I doubled the butter and honey and cooked them for 45 minutes. Also, I cut my potatoes smaller...like 1-inch pieces. Thanks for sharing!

Rosemary and Peppercorn Chicken

This was just "okay". I was trying to duplicate a similar dish at a local restaurant but came up short... too peppery and kind of bland. It should also definitely simmer longer. This is an okay starting point though; when I get it right I'll post it!

Brandy Flamed Peppercorn Steak

This was really good. I used dessert wine instead of the red and omitted the white sugar. Grand Marnier was my brandy of choice. I only gave 4 stars because the peppercorns were a little crunchy. Will cook longer on lower heat next time.

Aussie Chicken

One of the best recipes in my cookbook! I use the bacon drippings instead of vegetable oil and sometimes i use provolone and sharp cheddar cheese when I want an extra kick. YUM!
