Golden Beet Bread
Took this to the office. Was SURE that No One would touch it. Beet bread!?!? Are you serious?!?!? I can not believe that #1 everyone tried it #2 no one hated it. Don't know what turbinado sugar is & I was running low on agave so used only a 1/2 cup of that. Used red beets. Omitted walnuts. This is a great recipe to use on all those leftover CSA beets. I mean like what can I do with beets that I get every week! THIS!

Baked Spinach
Followed RiverTownMom suggestions. Used one of those big containers of fresh spinach. Wilted. Sauced half and onion with 1 giant clove of garlic. Used the half cup of bread crumbs on top and sprinkled parm cheese on it too. Then I poured the melted butter on that and kinda swirled it all up. Was super good. Big hit. Will make again pho sho

Slow Cooker Creamed Spinach
Brought this to Christmas Eve dinner. Wish I had remembered to not cook it for as long as the recipe said however we all liked the browned "side crust". Used 3 boxes of spinach. Used an entire pack of individually wrapped white American cheese. My mother-in-law asked me for the recipe! Was a big hit with even "non-adventurous" eaters. Next time I make it I'll try it with less butter (but maybe that's just the post-feast me talking).
