About this Cook
Since I work full time, I'm an extremely busy cook. I cook for my son, my almost-step son and my boyfriend. Although I've been cooking for over 20 years, I rated myself as beginner becuase I became diabetic a few years ago. I used to love baking, cooking sweets and I didn't care about calorie content. I had to throw out everything I thought I new and learn how to cook again. Since I'm diabetic, I see a nutritionist about twice a month and I've joined weight watchers. I thought the men-folk would revolt, but actually I'm cooking more now than before and we've all lost weight.
My favorite things to cook
When I found out I was diabetic, everything changed from my favorite things to cook to my cooking traditions. It's been about three years, and I'm still figuring out what to eat. I'm just now getting over the shock and am moving back into a comfort zone of cooking with confidence. Right now I'm into vegetables, anything roasted or anything that has a different flavor. I don't like sticking to recipes that are strictly low-fat, low-cal, low-carb or low-sodium. Mostly, for me this translates to low-flavor. I love this site because I can check the reader reviews to see how they altered receipes for their tastes.
My favorite family cooking traditions
Breakfast!! My teean-age sons start out the day with huge breakfasts, AND THEN they go to school and eat breakfast again. As far as holidays go, my favorite new tradition is to make it a holi-DAY, not a holi-WEEK or holi-MONTH. This allows me to splurge (within reason) on one day, guilt-free.
My cooking triumphs
Cooking Light's' Berry French Toast - we love this recipe. Also, any chicken recipe with gravy. My favorite recipe from this site is Grilled Salmon II - it's fantastic.
My cooking tragedies
I love cooking with wine for flavor, but unfortunately I'm not the best. I once cooked a chicken dish and everything came out PURPLE. I still haven't figured out what went wrong.

Fantastic Lemon Butter Fillet
My picky sons loved this one. Didn't bother with mincing the garlic, just used onion powder and added a dash of old bay seasoning. We ate every bite.

Apple Bacon Tomato Soup
This was an excellent recipe. I took it to work, and everyone wanted samples because it smelled so good. I served it with grilled cheese sandwiches and salad at home and my family loved it. I'm diabetic and constantly looking for flavorful recipes; this one fit right into my meal plan with only a few tweaks. I used three slices of center cut bacon to reduce sodium and increase flavor; used low sodium beef consumme instead of stock for more flavor; used white navy beans rinsed and drained to reduce sodium; used 2 bay leaves instead of 1; and added a couple of tablespoons of frozen apple juice. I also like a thicker soup, so I added 1 tablespoon of corn starch dissolved with a little of the soup about 15 min before serving. The next day I threw some leftover rice and shrimp in to make a complete meal and served it with cornbread. Next time I'll make it thicker with a roux, but this recipe is definitely a keeper.

Grilled Salmon II
After a year of making this recipe I made it again last night and it was fantastic. I added more garlic and reduced the sauce, but this is the best salmon recipe ever. I used go to a restaurant in North Atlanta and pay about $30 for this dish; now I think this recipe is much better. My sons also love it, and they're "picky eaters."
