Marshmallow Fondant

Reviewed: Aug. 27, 2011
This is a wonderful fondant recipe. Easy to make & it tastes great! I always grease a glass bowl with Crisco & zap a bag of marshmallows for 1 minute in the microwave. Then I add the water, CLEAR vanilla, & sift about 5 cups of powdered sugar. After mixing with a greased spatula (crisco, crisco, crisco) grease up your hands and start mixing it by hand. You can portion it out and add your color right away. Roll it in your hands and work the color in. Wrap each individual color in saran wrap and refrigerate. When it's had time to rest & cool for a few hours just roll it out with powdered sugar and PRESTO--you're a professional baker :)

Quiche

Reviewed: Nov. 11, 2010
Very quick and super easy! I did this on the spur of the moment and used the "easy pie crust III" (cut the pie crust recipe in 1/2 since i didnt need a top crust) recipe and patted the crust down into a 9x9 glass dish--cooked @ 400 for 45 mins. EXCELLENT REVIEWS FROM THE FAMILY :) THANK YOU FOR THIS RECIPE!

Busy Mom Peach Cobbler

Reviewed: Apr. 22, 2010
This had great flavor--however, the texture of the dough was like rubber. i was embarrassed to take it to the office so i made banana pudding instead. I ate one serving of this cobbler and this is NOT the cobbler recipe for me.

Boston Cream Pie Minis

i used regular sized muffins and used liners. I used a long tip icing tip to insert the pudding into the center of each cupcake. Super easy and eliminates cutting.

Simple White Cake

Reviewed: May 8, 2011
My boyfriend loved this cake! He said it was better than wedding cake (his fav). I sifted all the dry ingredients & added nearly 1 cup of milk. I think my secret ingredient was: 1 tsp of coconut extract. YUMMY! It's light and fluffy and I dont think i'll have any to take to the office...we're probably going to eat it all today.

Banana Pudding IV

Reviewed: Apr. 22, 2010
This pudding tasted wonderful--make sure you read how many ounces of pudding you're buying. At first it was like soup--and i re-read the directions and realized i had only used 1-1oz packet of sugar-free pudding. I had to run to the store and buy more. By the end, it was a way too thick. I guess too thick is better than too thin. Next time i will use only 3oz of instant pudding. Great flavor...but not sure it was worth all of those calories.

Salisbury Steak

Reviewed: Mar. 15, 2009
I changed this recipe based on what I had on hand @ the house: I used 1 tbsp of french onion soup mix (in 1 lb of ground chuck), 1/2 can of cream of mushroom, + the bread crumbs. Browned for 5 mins on each side. Mixed a mushroom gravy packet + 1 1/2 cans cream mushroom soup + milk and poured it over the browned meat and then baked. Yeah, i know i changed it a lot--but it's a great 'base' recipe that you can change up. AWESOME!

Green Beans with Herb Dressing

Reviewed: Feb. 15, 2009
Very tangy sauce--exactly what I wanted! I bought one of the 'steamer bags w/whole green beans' from the freezer section of the grocery store. I steamed the green beans in the morning and then poured the dressing over them and let the sit in the fridge for about 6-7 hours. I LOVE IT! Tangy and crisp...I've had similar tasting green beans @ a nice restaurant...but I do believe these were better! Ooooh and I didn't use as much olive oil as called for.
