Libby's® Pumpkin Cheesecake

I was worried after baking for 60 minutes that it wasn't cooking all the way through despite cracking around the edges. I proceeded with the sour cream topping anyways and returned it to the oven for 5 min. per the directions. I discovered that if you let it cool at room temperature for an hour or so, it will continue to set. It's best not to immediately transfer it to the fridge to cool. I tested it with a knife in the middle and it came out clean! Whew!

American Lasagna

This was my first attempt at making lasagna, and I was very successful according to my husband. The only thing I noticed was that the sauce was a little dry after baking. Otherwise, I will definitely make this again!

Wassail Punch

I followed the original recipe and did find it a little tart (as others have noted), but after adding a little extra apple cider, it was great! I made it at 8am for a party that night, and it got a lot of compliments!

Hot Artichoke and Spinach Dip II

Great party dip! I made it for a few friends, and they loved it as well... I did substitute sour cream for the mayonaise, and it gave a great flavor!

Pumpkin Fudge

Sorry, but I too had problems with this one. I specifically followed the recipe directions and used a candy thermometer (at the advice of others) just to make sure the temperature was right. However, after cooling it had almost a "taffy" consistency that stuck to the foil, and I was not impressed with the flavor. Guess I'll just have to keep going to Helen, GA for good pumpkin fudge!!

Quick Chicken Marsala

I was pleasantly surprised that such a simple recipe could taste so good! I served mine over angel hair pasta, and I thought the taste was comparable to Cheesecake Factory's marsala sauce.

Bacon Chicken and Dumplings

Great recipe.... the bacon added a lot of flavor! I was a little worried that the mixture wasn't going to thicken, but sure enough, after adding the dumplings and simmering, it turned out great!
