Roasted Vegetable Medley

I made this for our annual New Year's Day Brunch and it got raves. I prepared the vegys the day before, only adding a cut up onion (to the 1/2 hr. roasting time) & marinated everything in 2 separate bowls (for 1 hr. & 1/2 hr. cooking times). I roasted it the next morning, and the house smelled wonderful. The fresh basil made it perfect. Due to so many requests, I will be happy to make it again.

Carrot Cashew Quiche

Braised Balsamic Chicken

This chicken was so-o-o-o-o good; I can't wait to serve it to company. It was tangy enough for me using only 1/2 of the balsamic vinegar. I doubled the recipe & put it over rice the first night, and a couple of nights later, I put it over pasta. My husband couldn't stop raving about it; he's usually not too crazy about leftovers. He said it was even better the 2nd time around.

Stuffed Tomato Basil Chicken

I'm giving this recipe 5 stars because it tasted so good. Hubby loved it. My only problem was it fell apart while being served. I will make it again though.

Better Than Pumpkin Pie

I've made this pie twice. Once with canned squash & once with frozen squash. And, I used a graham cracker crust (coat with egg whites & bake 5 minutes @ 350, to keep from qetting soggy). Both pies were excellent.

Cream Corn Like No Other

Nostalgic Apple Pie

I made this pie for Sunday Brunch. No one knew it was made with Splenda & all 25 guests couldn't stop raving about it. I'll make double the amount of pies next time.

Tortellini Soup I

THE BEST ... I made this soup with Thanksgiving Dinner. My family, even the kids, couldn't stop raving about it. To make it more like a soup, rather than a stew, I added 4 more cups of beef broth. I substituted frozen red & green bagged peppers for the fresh green peppers. I made it the Tuesday before Thanksgiving to let the flavors blend. I had a bowl for Wednesday's lunch. It was delicious. I will absolutely make this again... Thanks Donna
