Vegetable Fried Rice

I used 3 eggs when I made this and had no soy sauce on hand- so instead I used worstershire - and it was fine! (I know- I am as shocked as you are. The world didn't end!) I added celery, peas, carrots, sweet peppers, and asparagus - all chopped up super tiny. It was a lovely way to use a lot of leftover brown rice. This recipe seems so versatile and easy to expand (or contract). Also- I used ground ginger- rather than fresh--- the result was a nicely spiced dish !

Easy Tuna Patties

What a lovely dinner! Ok- so I didn't think it would hold together with so little egg - but it did! Instead of using chopped onion I used a packet of Lipton onion soup mix and I added a few dashes of old bay season. To make the patties I put a bit of the bread crumbs in a 1/2 cup metal measuring cup , packed the mix in very tight and added a bit more of the bread crumbs on top before turning the cup over on a tray. That portioned the mix out PERFECTLY and thought I would share that info! 8 gorgeous, perfectly packed patties that held up without falling apart at all! Amazing. Side notes on flavor- chipotle Tabasco is great on these and my 13 month old loved these to pieces!

Black Bean and Rice Burritos

Great recipe! I doubled the beans, added 3 small diced sweet peppers, and used 1 can of organic diced tomatoes rather than 8 oz of tomato sauce. I kept spice proportions the same- and for a spice sensitive family with kiddos- it was perfect. I melted a tiny bot of shredded Mexican cheese in the warmed tortillas before filling with rice and bean mixture -and it was a hit!

Low Carb Yellow Squash Casserole

I used 2 large yellow squash, 2 large zucchini. This turned out ok- not great. Maybe that other home chef's idea of adding chiles is just what it would take to make it special. I ground up my almonds in the nutribullet with a milling blade- maybe chopping

Pasta/Pizza Sauce

Great quick recipe- even without the wine (I just subbed water in its place)- this recipe as written makes enough sauce to do 4 impromptu mini pizzas using Flatout flatbreads as the crust- perfectly. (Oven at 425 for 9-11 min ) add toppings as desired. I can see using this recipe weekly!

Yummy Cilantro-Jalapeno Hummus

Changes we made: added the juice of 2 small lemons rather than 3 tbsp, 2 oz of olive oil, and this was done in a nutribullet. It made for a thick hummus - my husband usually makes the hummus and adds a little water when using

Slow Cooker Turkey and Potatoes

I used 2 turkey legs that we reserved from thanksgiving - they were pre cooked, but frozen. I used 4 sweet mini peppers, and 4 red potatoes. All other recipe notes were followed. There is enough liquid in this dish that it could easily be converted to a one dish meal by adding 2 cups of rice with the potatoes. Because it ends up more like a gravy than anything, it would be lovely on biscuits. It was nice for dipping crescent rolls in! The rice only serves as a sauce delivery system here. I'd add more peppers next time - they got a bit lost in the cooking. Overall it was a crowd pleaser and a nice way to use frozen precooked leftover turkey legs!

Delicious Black Bean Burritos

Fantastic! A new family favorite. I used the 4 green onions I had on hand and 6 small sweet peppers- and it turned out great. I doubled the recipe to serve 4- and we could have more. I guess I'll triple it next time!
