Easy Blueberry-Lemon Parfait

We bought WAY TOO MANY fresh blueberries so I was searching for ways to use them before they spoiled. We have had this for a dessert three times in the past week and everyone polisheed off every bite - all three times! Its a nice light summer dessert that is very refreshing and so good for you!

Strawberry Cake from Scratch

I wish I could give it 10 stars! THIS WAS AMAZING. It was incredibly moist! It has a nice color. I froze it as soon as it cooled; thawed it the next day and frosted it semi frozen. It presented well; it didn't crumble apart as I tried to frost it and my co-workers complimented me over and over! Definitely a 'keeper'!

Too Much Chocolate Cake

This was very good and very easy, but I didn't detect a 'wow' factor! I would make it again, but it's not become my 'go to' for a chocolate cake. I did forget the chocolate chips which probably was the 'wow' factor. It was very easy and those not trying to critique it would probably be very satisfied with it.

Peanut Butter Chili

My husband said it was good. He even knew about the peanut butter! I thought it could have had more liquid. I might add some chicken broth to the leftovers.

Banana Oat Muffins

I used homemade chunky applesauce instead of the oil and added walnuts. My husband who does not like anything that could be close to "healthy" ate more than I did! Definitely a keeper!!

Lyndsie's Dr. Pepper® Meatballs

This is good; very reminescent of Coca-Cola Chicken which is a favorite in this house. Followed the recipe exactly and thought the Ranch Dressing would change the flavor, but I did not detect it.

My husband wanted more of a 'kick'; I thought it fine. However, I was disappointed that there wasn't enough liquid. I added 3/4 c water and a small can of tomato sauce. I will make it again - with the adjustments noted.

Peanut Butter Popcorn

I gave it 5 stars WITH the following changes as suggested:I added a half cup of peanut butter rather than the suggested quarter cup. I also added half a cup of peanuts and baked at 200 degrees for 30 minutes stirring every 10 minutes. My DH and I could not keep our hands off it!

Chunky Applesauce

Talk about quick and easy!! This is a recipe I will use over and over. I put it on the stove when we sat down to dinner and it was ready to serve (vanilla ice cream would have been good!) as we cleared the table. Thanks for sharing.

Pineapple Crisp

YUM!!! Followed the recipe exactly and WILL make again. I might add some vanilla or almond extract, just for kicks! Other than that, awesome! I served with vanilla frozen yogurt and it's gone, now! (Came out of the oven 15 minutes ago!!!)

Tahini Cookies

I was amazed at how good these are! (These would be GREAT with chocolate chips, but that sort of defeats the purpose of a healthy cookie, doesn't it?) I followed the recipe exactly then drizzled a little more honey after reading reviews. I use black walnuts; don't like raisins. They are delicious warm and very good once cooled. Thanks for sharing. These will be a regular in our house.

Lemon Cake

This is a dense cake, more like a pound cake which I liked even though it didn't rise as I hoped, I baked it in layers. After tasting the batter,I added additional lemon extract. I also frosted a light layer of lemon curd on the top of each layer before I frosted it with the whipped topping mixture. It was still disappointing, as far as lemon flavor was concerned. I wanted something more tart, kind of 'hit you in the face' lemon!

Squash and Apple Bake

I liked it a lot, it's buttery AND sweet. My husband, not a fan of vegetables, actually has started looking for other recipes for this squash despite the difficulty he had peeling and cutting the squash! He wants me to buy another and said he will handle the peeling and chopping!! Thanks for sharing. I suspect we will feature this for many Thanksgivings to come!

Doggie Treats II

Butternut Squash Bake

I gave it 5 stars because my husband actually admitted to liking it and took seconds! It is good; I do like the slightly sweet squash flavor with the feta (I had no blue cheese). We will definitely make this again!
