Pumpkin Apple Streusel Muffins

This recipe is totally awesome. I followed the recipe exactly and my rating is the full 5 stars. I made another batch and added a teaspoon of nutmeg, allspice and cinnamon. I also added a full cup of chopped pecans. Next time I will add a little bit of vanilla. I am going to use applesauce in place of the oil and will use the whole can of pumpkin. The streusel on top puts the whole thing over the top! This recipe is so flexible with spices and nuts and can be made into muffins, bars, tube cake, etc., brown sugar can replace white sugar. It's all good. This is a full fledged keeper in my house and will definitely be a holiday special! Thanks for a great recipe. Be sure and try this one. It's easy, too.

Bob's Stuffed Banana Peppers

I read a lot of reviews but had already purchased 8 nice long banana peppers. I cut the recipe in half and the only change I made was to ease up on the salt and add 2 teaspoons of sugar to the sauce. That said, this is one of the best sauces I have ever tasted. I stuffed all 8 peppers and still had some meat mixture left (even with halving the entire recipe). My son doesn't like banana peppers so I rolled the remaining meat mixture in three 8" flour tortillas. I put the peppers and tortillas in a 9 x 13 baking dish, sprinkled a little mozzarella over it, and then poured the rest of the sauce over it all. I wished I had a little more sauce but next time I will know. This is a really good recipe that you can tweak to your liking. You could stuff anything with this meat and sauce or serve with pasta or rice. Minus stuffing the banana peppers, there is nothing difficult about this recipe. I hope you won't be afraid to try it. The taste is just awesome.

Pineapple Coconut Zucchini Bread

I gave this a 5 star because it is a wonderful base recipe. As others have said, the flavors need to be more intense. I doubled the cinnamon, pumpkin pie spice and added 1 teaspoon of nutmeg and 1/4th teaspoon cayenne pepper. I used 1 cup coconut and 1 cup walnuts/pecans. Used half oil and half applesauce. This made 4 medium loaves and 1 small loaf and baked in 45 minutes. It's a great recipe for texture and consistency ... Just needs a little more flavor.

Green and Bleu Salad

What a gorgeous salad and oh so tasty! Loved the light lemony dressing and the crispness of the fruit and veggies. Opted for feta since I'm the only blue cheese eater in the house. Made way more than 4 servings unless you're serving this as a main course. I did as someone else suggested and only dressed the portions we ate. Tomorrow will tell how well it kept. I did top with a half cup of chopped walnuts.

Caley's Classic Zucchini Bread

The texture was great. However, it did not have a lot of flavor. I followed the recipe but added a half cup of walnuts and half cup raisins. I will try it again but will add more spices, perhaps some lemon or orange flavor, too. I will try it again.

Fruity Curry Chicken Salad

DO NOT MISS OUT ON THIS ONE! the only thing I did was add about a fourth of a large jicama cut into small cubes for a little extra crunch. Otherwise I didn't change a thing. I poached boneless, skinless chicken breasts in chicken broth and coconut milk. Served with crisp, homemade pita chips. An absolutely perfect chicken salad with a freshness to die for.

Creamed Beef for SOS

Delicious! I used two cups of milk to get the creamy texture. Second time I made it, I added a cup and a half cooked cubed Yukon potatoes, worchestire sauce and a can of peas and diced carrots. Made a thick beefy stew. One time I added an envelope of dry onion soup mix. That added an awesome flavor. Either way, it's a hit at my house and so versatile.

Easy Apple Coleslaw

One of the best coleslaws ever! Didn't have any carrots and added a half teaspoon of poppy seeds. What a wonderful recipe! Could add pecans or walnuts or sunflower seeds, if desired. My family loves this slaw and it doesn't require a speck of salt! It's all good. Thank you for a real keeper!

The Best Potato Salad

Awesome, easy to make, full of taste. I've made my moms potato salad for years ... Chock full of bell peppers, pickles, onions, green olives, celery, etc., with a dressing made to taste with mayo, vinegar and sugar. This recipe beats the old family recipe. The quantities of ingredients are just right and the ranch, mayo and yellow mustard make a perfect dressing! I added a fourth cup chopped bell pepper and just a little chopped celery. I didn't have the peppercinis but I did have 2 small, fresh finely chopped jalepenos with no seeds or rib that was leftover from tacos the night before. They brought just a hint of fresh spice. This will be my go to potato salad from now on!

Spring Lime Tea Cookies

Totally awesome soft cookies. I was making a heavy, spicy meal and just wanted a light bite of something fresh for dessert. I stumbled over these cookies and decided to give them a try. I read earlier reviews and used half milk/half whipping cream. I used two TABLESPOONS of lime juice in the batter. On a whim, to add some texture, I added a half cup finely chopped, toasted pecans. I chilled the dough before dropping teaspoonfuls onto parchment papered cookie sheets. A 10 minute cook time was perfect. I added 1 tablespoon of cream cheese to the lime juice and powdered sugar glaze to give it some body. The taste was great but the consistency was just too thin. Next time I am going to try using a light lime flavored icing. These were still a hit for a fresh, light dessert.

What an awesome recipe! The crunch of the chicken along with the sweet heat of the sauce just made it taste perfect. I also appreciate that this recipes seems to hold up to a variety of tweaking. You can suit your own taste buds with more or less heat, sweet, crunch, fried or baked, with veggies or not, citrus, garlic, ginger, peanutbutter or oil, sesame or no .... Lots of flexibility! A big thanks to Chef Daddy!

Yummylicious Japanese Beef Croquettes

First time try and they were good. However, next time I will use worchester sauce in place of the soy sauce. Will season potatoes and beef with salt, pepper, pepper flakes perhaps. I will also try cooling the mixture before making the croquettes as someone suggested. I found them a little loose and difficult to form into patties. Will definitely try again.

Simple Broiled Grapefruit

With added butter, it would be an easy 5 stars! You can also add butter and whatever spices you like to the brown sugar and pop it in the microwave for a minute. Quick and so good on a cold winter day.

Best recipe here! These are absolutely gorgeous and taste as good as they look. I like the peelings on and put a small pat of butter between every other slice. Different cheeses and seasonings are wonderful to experiment with. Haven't had a disappointment yet. Totally awesome and easy to prepare.
