Easy Granola Bars

I use this recipe all the time, or at least the general idea of it. I always change the ingredients, just keep the same proportions. I always sub out the butter for extra virgin coconut oil - and if you aren't aware of the benefits of coconut oil you really should look it up. Its great. :) I sub in things like chia seeds, hemp hearts, quinoa puffs, ground flax. Sub in organic agave nectar instead of sugar. I use a baking sheet with a lip and line with parchment paper. A regular sized sheet will fit two batches nicely. I press the mix into the pan until firm and smooth. I bake until the top starts to turn golden and then when I take it out of the oven I slide the parchment and granola out of the pan and leave it to cool on the stove top (glass top) I find the key to getting good shape is to gently and quickly cut the granola while it sits warm and then leave it to cool completely before running the knife through again to cut them apart.

Jacky's Fruit and Yogurt Muffins

Made these with the kids using some vanilla yogurt as we didn't have any blueberry yogurt. We added the zest from one lemon to the batter while mixing. Didn't have fresh blueberries so we folded in some frozen ones just as the batter was ready to avoid having blue batter. These came out fantastic. The lemon zest was the perfect compliment.

Big Soft Ginger Cookies

New Fav! I just made these - they are so good!!! I let the dough sit for a few minutes (partly because I forgot to preheat the oven) Sitting a little bit made the dough easier to handle. I used a flat based cup to flatten each cookie after it was rolled in the sugar mix, which made nice uniform flat cookies.

Chocolate Cookie Cheesecake

This was the first cheesecake I have ever made - and it worked perfectly!!! I followed the recipe exactly. I was nervous at first that it was undercooked, but it firmed up perfectly. I decorated it with 16 oreo halves -one on each slice and cut it with fishing line as someone suggested. The fishing line was AWESOME and made perfectly sliced pieces that were easy to lift off with a cake server. It is rich, so slim slices are a must!

The Best Rolled Sugar Cookies

Excellent cookie. Consistent results. I usually bake and freeze batches prior to needing them, as they freeze very well. This way I have them on hand when I need them and have time to decorate them nicely after they have thawed. I use "Sugar Cookie Icing" found on this website to decorate with.

Chewy Brownie Cookies

WOW!!! These are so good. I made them in mini muffin pans, I had a pan of 24 and a pan of 12 and the dough divided perfectly between them making 36 cute little 'bite brownies'. Just be sure you grease the mini cups. I used less chocolate chips, approx 1 cup because thats all I had on hand. Baked 9 minutes, and left to cool until I could pop them out of the pans.... perfect!
