Brazilian Black Bean Stew

I used authentic, fresh Mexican chorizo but had no mango, so used a nectarine instead. Let me tell you, this dish is sweet and spicy and delicious. Everyone in the family liked it. I didn't add any additional spice (just cilantro) not even the salt and it was perfect because of the highly spiced chorizo! I did simmer it another 15 min after adding bean to cook down the tomatoes. Try it!

Spinach Stuffed Chicken Breast

I followed advise of reviewer and marinated chicken, partially cooked bacon ahead, and used her filling/spice suggestion. And it was fairly good, but not great. I tasted the filling before baking and it was yummy. However,I think the cheese and sour cream melt out of the chicken during baking, leaving it a bit dry and plain. This is good, but not great recipe. Needs bit more tweaking.

Buttermilk Pancakes II

These were the BEST pancakes I've had! I let eggs, melted butter, and both milks sit out for an hour before starting. As recommended, I added a dash of fresh lemon juice and vanilla. And right after I poured 1/4 cup batter per cake on the hot griddle, I sprinkled in fresh blueberries. I ate several plain--terrific! Halved the recipe and it made 15 four inch pancakes. This is going to be a regular at my house.

Farmer's Casserole

Pretty good, but needs a little more spice or something to jazz up the flavor. I added more cheese and a dash of garlic powder, but it still was somewhat plain. Didn't have pepperjack, so used mexican cheese with some green chilis from a can.

Raspberry Chocolate Chip Muffins

5 stars for taste--these are delish! 4 for appearance-soggy bottoms! My chips and berries sunk to the bottom of the muffin making that part stick to the baking cups. I did add a few more chips and raspberries than the recipe but not a lot. Any suggestions on how to prevent this?

Squash Medley

This is an yummy, somewhat sweet and interesting way to prepare zuccini/yellow squash. It complemented the BBQ salmon I made very well. Even my veggie-avoiding son ate it! I didn't have bacon, but he would have liked that even more I bet. I made it again and it is good with the bacon. Watch the red pepper if you don't like spicy.

Award Winning Soft Chocolate Chip Cookies

This recipe is even better if you only add a bag of Heath Toffee Bits made with milk chocolate. Everyone loved them. I made half a batch and it made plenty. They do flatten out a lot (I used butter) but stay soft!

Thai Steamed Mussels

This recipe rocks! We have a Belgian restaurant in town that makes great mussels and my husband liked these Thai curry mussels better than theirs! You really don't need 2 cups of cilantro--maybe 1 cup. Just sprinkle some in each bowl before you spoon in the mussels and broth. This is so easy and so delicious. Guest will be impressed.

Apple Harvest Pound Cake with Caramel Glaze

This is a great bundt cake! So moist and delicious! I served the sauce on each piece as rec--warmed up the sauce and served w/ vanilla ice cream. I made a few slight changes based on comments: I used 1 t. cinnamon and dash of nutmeg. Cut oil a bit to 1 and 1/4 cups. I used 2 large Granny Smiths apples and used pecans, as I didn't have walnuts. Baked 70 minutes at 325F. Came out perfectly and everybody loved it--even w/o sauce eaten for breakfast.

Flounder with Shrimp Sauce

This was a pretty easy and delicious dish! I used tilapia cutting each fillet in half lengthwise. The sauce thickened up too fast and I did have to add more milk a few times, so I ended up with a fair amount, but managed to finish it. As recommended, I cut back on the dijon mustard (glad I did) in the sauce. I put a little extra chopped shrimp in the sauce and that made it extra yummy. Steaming the fish under foil kept it nice and moist.

Banana Banana Bread

I made the banana banana bread recipe with the following additions: 1 t. vanilla, 1/2 t. cinnamon, and a dash of nutmeg. (I forgot the recommended 1 T. oil) and it turned out great. Everyone at work loved it. Said it was moist and delicious.

Aunt Mary's Banana-Chocolate Chip Bread

Sixty minutes too long! Came out black on edges. Other than that, was a decent banana loaf (I sub. butter for shortening as well) and added chopped pecans.

Best Fried Green Tomatoes

I liked them, but husband and son did not. I think they're not used to the flavor of green tomatoes. In any event, a fair amount of work and mess for an okay dish and leftovers go soggy.

Enchiladas

I liked that this recipe was simple, but after reading reviews knew I had to add to it. I only used 1 lb. ground beef. I used half a small can of green chopped chiles 8 corn tortillas and 2 cans of enchilada sauce--one mixed in with the beef, and the other for dipping tortillas in, with a bit leftover for the top. Topped with plenty of shredded cheese. Whole family loved 'em.

Smothered Pork Chops

This is a very good recipe with something added for more flavor. I browned my chops both sides,first, removed, then did added the onions,(shallot coz I had it) garlic, chicken stock, s & p, and a splash of red wine for flavor and thickened it. Then added back chops, covered and cooked for 20 minutes. They were very moist and delish. And yes, it does make lots of sauce. A family favorite!

Chicken Oreganato

I loved the flavors in this dish. But I did put the chicken thighs in a ziplock w/the lemon and oil and spices to marinate in the fridge for several hours. I think this really helped! A keeper!

Chorizo Breakfast Burritos

I have to give it 5 stars with slight changes: I used chicken chorizo sausage that I found at Trader Joe's. Also eliminated onions to make it lower in carbs tho I love red onions andI eat w/o the tortilla. Good w/a variety of different cheeses too. My teen son and husband love it so much they ask for it regularly!! Delicious and satisfying!!

Raspberry Pain au Chocolat (Raspberry Chocolate Croissants)

Wow! So simple and yet so elegant and delicious! I used a mixed berry all-fruit and 2 squares of Hershey milk chocolate as suggested in a review--great idea and a lot easier than spreading Nutella or investing in a whole jar. I think one person above didn't realize to cut pastry rectangle in thirds across, not lengthwise! So before adding filling, pastry size will be about 5 & 1/2"x 3 & 1/2"

Calico Rice

I made this dish close to the recipe--a tad less cumin and salsa perhaps. It's very tasty, the soup mix makes it richer. Only one caveat--I planned on 25 minutes and it was not done...my package of long grained rice said 50 minutes and so I added another 25 minutes and then it was perfect. So check your rice package before setting the timer!
