About this Cook
I am a mother of 4 and have two Grandchildren, one girl and one boy. I live in the country and enjoy horseback riding, photography, birds, butterflies, cooking, baking and family outings. I dream of having a job where I can photograph foods for publications.
My favorite things to cook
pies, cookies & cakes
My favorite family cooking traditions
I make a heart shaped cake each year when Valentine's Day comes around. It started with me making one for my husband 40 years ago after purchasing an aluminum heart shaped set of baking pans in a 5 & Dime store. Each year I make it a different flavor and color/design, I often put a surprise center icing inside of it.
My cooking triumphs
Birthday Cakes, cookies, cream puffs...yum!
My cooking tragedies
can't remember any...I am sure there are some from the earlier days...ha ha ha

Irresistible Irish Soda Bread
It is my 3rd time making this quick bread. Very easy to make and tasty. I added about 1/2 cup of golden raisins to the batter.

Nana's Apple Crisp
Preparing and baking this was a snap! I used 4 huge apples, which seemed sufficient. However, I think if one wanted, they could add a few more apples to the recipe and it would be just fine. I used less butter on the top, about one tablespoon dotted around. Whole oats was what I had on hand, they worked out well. Also, I replaced 1/2 cup of the one cup of white sugar with dark brown and then used 1/2 cup white sugar. I will make this again.

Coconut Macaroons
EASY! I wore latex gloves to keep my hands from getting messy. Also, I used only one teaspoon of almond extract, that was plenty for me.
