About this Cook
I've been cooking since I was a kid. I'm not super fancy, but I like good food. I just can't stand spending lots of money to eat out and getting sub-par food.
My favorite things to cook
Soup, apple crisp, guacamole, beer can chicken, ribs, Indian and Thai food. My husband loves Mexican and lots of hot spicy food in general.
My favorite family cooking traditions
My parents have a small orchard on their hobby farm. One tree makes apples that are perfect for apple sauce. I love making apple sauce with my mom.
My cooking triumphs
Apple crisp made with apples from my parents' orchard, served with a plain cheesecake and a bit of caramel sauce. Or just heated with vanilla ice cream.
My cooking tragedies
Curried tuna noodle casserole. Gross.

Homemade Mac and Cheese
I usually use this mac & cheese recipe but i make a few changes: I add bacon and onions and thyme and mustard. Then it's perfectly to my taste.

White Cheddar Macaroni with Bacon and Thyme
I've tried out a few bacon-onion mac & cheeses. This was pretty good. I like mine to be a bit more zippy, so I think next time I would add mustard (I like dijon, but you could also add just mustard powder too). I did use less bacon than called for, but next time I would use more. I also just left the bacon in the whole time the sauce was cooking and it was fine.

Creamy Mushroom Pasta
I added a LOT more butter (probably 1/4 cup) because I also added a large chopped onion, 4X the garlic and a full package of mushrooms. I also put in some cubed chicken breast and added chopped tomatoes at the end. My spices were: a tsp of thyme, 1/2 tsp oregano and 1/2 tsp parsley. I only used about a tsp of cornstarch and had a cup total of wine and chicken stock when combined, only. We LOVED it!
