Italian Sausage Soup with Tortellini

Had to substitute one thing: My daughter doesn't like chunks of tomato in anything, so I didn't add the tomatoes, but instead of the can of tomato sauce, I added 2 cans of tomato paste and 2 cups of water. I also chopped up 1-1/2 cups of kale and added it to the onions as they sauteed. I was concerned about the 1/2 cup of wine, because when I put it in the soup looked pink, but it cooked down. OMG - (with my replacements) this recipe is awesome.

Jam Filled Butter Cookies

The recipe as is is OK. I agree that the flavor is somewhat bland. I am going to try another batch with vanilla extract, salt and possibly with shortening added to the butter.

Easy Chicken Enchiladas

OK, so I made it and then started looking through the bad reviews (soupy, etc.) And I started to be concerned. But it worked out fine: I cooked it for 20 minutes and then put enchilada sauce and cheese on top and cooked it for another 30 minutes. And it was really good! My only comments are that 1) the quality of your ingredients are important and 2) the 10 enchiladas that this recipe makes are pretty large and somewhat rich; my daughter and I ate one each and my big-eater husband ate three. We have five left over for another whole meal. I will cook this again.

Best Peanut Butter Cookies Ever

Good recipe. Daughter likes them. They are very peanutty. It's odd that the reviews on this cookie are so bi-polar. We used Costco organic peanut butter (peanuts + oil) and cut the sugar by 1/2 cup. We baked for 8 minutes (our oven runs very slightly hot) and let them sit on the cookie sheet for 5 minutes before removing to a wire rack. Ours kept their shape through baking (reasonable spread). We must have rolled our balls slightly under an inch because we got 48 cookies out of the one recipe.

Easy Pudding Cookies

I had high hopes for these cookies but they didn't turn out very well. The texture is fine, but the taste is wierd and bland, they are greasy and they have an odd greyish color. I am disappointed because I read all the rave reviews, but I will not make these again.

Caramel Apple Jam

This is a great base recipe. Based on my jamming experience, I modified as follows: I increased the water to a full cup, added 2 tablespoons of lemon juice to the chopped apples, reduced the white sugar to 2-1/2 cups, and for spices I added 1 teaspoon apple pie spice (makes it taste like apple pie.) I've canned three batches so far (the recipe gives me a little over 6 half pints) and the feedback from friends and family is really good. Note that sometimes the jam takes a day or two to really set.

Oatmeal Raisin Cookies I

I rate this a four with modifications, a three without. I did a first batch exactly as the recipe and what I got was more like oatmeal lace cookies. I didn't *not* like them, but wasn't expecting that consistency. So then I did a second batch, added 1/4 cup flour, scooped 1 and 1/2 t dough for each cookie, (about 28 cookies) baked for 9 minutes convection-bake and removed them from the pan to a cooling rack immediately. And they came out great.

Poppy Seed Muffins

These were quite good. Based on the other reviews, I reduced the sugar to 1-1/4 cups - and they turned out slightly sweet as I like them. I also increased the poppy seeds to 2 t instead of 1-1/2 t. I did not do the glaze as I don't want these to be too sweet. They are yummy without it, tho.

Apple Raisin French Toast Strata

Mixed reviews at our house. I really liked it, tho it needed to cook longer than the recipe says (more like an hour.) My husband and daughter thought it was too goopy in the middle and didn't like the cream cheese in it. I may try to make it again without the cream cheese and cooked much longer to dry out the middle.

Cucumber Slices With Dill

I reduced the amount of sugar by over 1/2 and marinated the mix overnight. Then I drained it and added about 2 cups sour cream and served it. My guests really liked it.

Plum Quick Bread

I made this recipe, and although it was delicious, it wasn't quite what I was expecting. The end result was a moist, very sweet loaf that wasn't very firm when I sliced it. I think I'll tinker with the recipe to get a firmer, less sweet loaf. I'll probably reduce the sugar and the oil.

Red Cabbage

Wow, very surprising. I made this recipe for an Oktoberfest party. I made it the night before and then warmed it up in the crock pot. I did add a little extra sugar to balance the vinegar (thanks previous posters!) I had reservations about how this was going to turn out, (not very familiar with cooking red cabbage) but it was very tasty.
