Dill Dip

Reviewed: May 13, 2012
I cut this recipe down a bit since I didn't need so much and used less mayo than sour cream like some suggested (about 1/2 as much) also cut the sugar in half. I used green onion instead of regular because that was all I had. The dip was excellent though and got better as it sat and the flavors came together.

Chinese Broccoli Slaw

Reviewed: May 13, 2012
This was excellent. My party guests loved it too and asked for the recipe. I followed the recipe exactly except couldn't find 16 oz bag of slaw so I bought 2 12 oz bags and used both. There was plenty of dressing and crunchy bits for the extra slaw too.

Roasted Brussels Sprouts

Great way to make brussel sprouts! I cut them in half but otherwise followed the recipe and these came out great. Mine were nicely browned and not overdone or mushy at all.

Mexican Casserole

This was pretty good. I did add taco seasoning to the meat. I also made Easy Mexican Casserole from this site and liked it better. It had a bit more flavor but this one wasn't bad.

Easy Mexican Casserole

Reviewed: Apr. 25, 2012
This was really good and easy. Only changes I made were to add taco seasoning to the meat and I used Rotel (drained) instead of fresh tomatoes and threw in the rest of a can of chilis I had. It had a nice little kick to it.

Mac and Cheese Henwood Style

Reviewed: Jun. 30, 2011
This was fantastic! I used elbow mac because that's what I had on hand and used butter instead of margarine and garlic instead of onion. I also went a little heavy on the blue cheese. I did put it in the oven for 20 min but think that step was totally unnecessary as it was awesome straight out of the pan. My sauce was perfect and didn't need to thicken.

Chocolate Spoons

Reviewed: Feb. 14, 2011
These were so quick and easy! I made them for Valentine's Day and used white chocolate for the drizzle and made a heart shape on the spoon using a plastic baggie and #2 tip. I used clear plastic spoons. I did not refrigerate and they came out beautifully and hardened pretty quickly. I also added a little shortening to the chocolate when melting and only microwaved 30 seconds stirred and then 1 minute in the microwave. The chocolate wasn't completely melted but soft and I just stirred until smooth. I think 3 mins would burn the chocolate unless you have a very low wattage microwave. Excellent recipe and I loved the other reviews decorating tips for different holidays or occasions.

Chocolate Chip Muffins

Reviewed: Jan. 17, 2011
These were excellent. I made a few small changes. I upped the milk and chocolate chips to a full cup and added 1/3 cup sour cream. When I went to get an egg, I realized I didn't have any and I didn't have any applesauce to substitute either so I used apple butter. They really turned out well.

Pumpkin Spiced and Iced Cookies

Reviewed: Dec. 2, 2010
These were pretty good. I cut the recipe in half and the choc chips by 4. The chocolate was still a bit overpowering. I'm not sure I'd have realized they were pumpkin if I hadn't made them. You could just really taste the chocolate. Still they were tasty. They are a very wet and heavy cookie. Oh and I didn't ice them as I didn't have time.

Pumpkin Muffins II

These were really good. I did omit the allspice just because I didn't have any. Everything else I kept the same. It made 24 muffins for me though not 12.

Cherry Chocolate Cookies

Reviewed: Mar. 20, 2010
These were excellent. I cut the recipe way down to 15 servings (since I only had 1 and 1/2 cups of sugar) and it still made about 3 dozen cookies which was a good amount. I also used maraschino cherries on some of the cookies and when I ran out I switched to some candied cherries I had and that worked too (maraschino are better though). Will definitely make these again.

Key Lime Pie VII

Reviewed: Oct. 27, 2009
I'm not the biggest fan of key lime pie so I'm rating this based on my husband who I made the pie for. I followed the recipe exactly and he loved it. It was a pain to squeeze all those tiny limes but he said it was definitely better than before when I made it with the bottled key lime juice.

Tourtiere (Meat Pie)

Reviewed: Oct. 4, 2009
This sounded like an odd combination with the meat and spices but it was EXCELLENT! We loved it! I made it exactly as called for except used beef bullion instead of chicken since that was all we had. I did not have a problem with undercooked potatoes. I think the key there is to cut them really tiny which is what I did. We'll definately be having this again.

Tuscan Grilled Steak

Reviewed: Mar. 14, 2007
This recipe was excellent. We cooked it one night for dinner without putting it over arugala. Just served the steak with surprise south beach mashed potatoes and the stewed tomatoes from the south beach diet book. There's just two of us so we had plenty of steak left over and used some the next day on salads for lunch and even had a little left over that we ate with eggs this morning. The South Beach Diet has been so easy for my husband and I as most of the foods are really good!

South Beach Peanut Butter Cup

This is a great dessert. I'm not much of a sweets eater but I find when I diet I crave something sweet and this is perfect. It would be great for kids too as they seem to love sweets but this one is healthy!

Coconut Curry Fish

Curried Mustard Greens with Kidney Beans

Reviewed: Mar. 8, 2007
I've never had mustard greens before but wanted to give them a try. I did not like this at all and my husband wouldn't even try it. Still I gave it 3 stars because it is easy to prepare and I'm thinking that I probably just don't like mustard greens! The sauce was ok though.

Slow Cooker Lentil and Ham Soup

Reviewed: Dec. 12, 2006
My husband and I both loved this. I followed the recipe exactly. It doesn't specify what type of lentils to use, I used the tiny split red ones (because that's what I had) which pretty much disintegrate during the cooking process making the broth very thick and hardy. Excellent!
