Uncooked Banana Pudding

Soft Gingersnaps

I find most gingersnaps to "wimpy". The spice taste was excellent in these, although one person I served them to thought they were "too spicy". Most loved them though. Mine didn't show the crackle texture very well but the cookies were delicious.

Fresh Rhubarb Bread Pudding

This was insanely good and very easy. I made it with some old whole wheat bread, added a little vanilla, and served it with a caramel sauce. It was a huge hit. It's one of the best recipes I've tried so far on AllRecipes.

Quick and Easy Brownies

If you follow the suggestions of only using 1 cup of flour these are amazing. You can throw them together in about 5 minutes and they taste great. They need a full hour to cool to a decent texture and really come into their own the next day.

Best Ever Brisket

Far too salty! I cut back on the salt as another reviewer suggested but only by a 1/2 tsp and that was not enough. I literally WASHED IT in the sink the next day in order to be able to eat the leftovers. For my tastes, the chili flavor was a bit too overpowering. After a good scrubbing under warm water (LOL) it went down just fine.

Tropical Turkey Meat Loaf

I was suprised by how good this was. I was planning on giving any leftovers to my parents to take home since I hate turkey, but I really liked it and kept the leftovers for myself! I used panko breadcrumbs and 2 whole eggs and the texture was lovely. It is better the next day...and the salsa is better the second day. Next time I would double the salsa recipe and make it a day in advance. I would add more pineapple to the top of the loaf before cooking too. It even tastes good with ketchup when you run out of the salsa. It took mine less than 1 hour to register 180 degrees, so you may want to keep an eye on it while it cooks.

Spring Biscotti

I don't really like biscotti, but these are great. The texture is perfect. Crispy but not too dense. Good flavor as well. I will make these again.

Paul's Pumpkin Bars

the "bar" (it's a cake) has a good texture and is moist but is almost completely flavorless. I would at *least* double the spices in this. Horrible, bland bars. On the up side, most people will say anything with cream cheese frosting is delicious, so double the amount and slather it on if you must make these.

Lentil Soup

Based on comments here, I made some substitutions and I think this is the best lentil soup I've had in a long time. I added another 2 carrots, I doubled all the spices. I added 1/8 tsp. red pepper flakes, I bought a can of 28oz. crushed tomatoes. I added the 14.5 oz. that the recipe called for, then used the rest mixed with 4 cups of broth and water to make the 8 cups of "water". I used 1 cup brown and 1 cup red lentils, I used 3 T. of lemon juice instead of vinegar, and I added about 3 Tablespoons of port. I guess that's a lot of changes, but trust me, people can't stop eating it. It's really great.

Russian Mushroom and Potato Soup

Great Recipe. I only made three substitutions. I was going to be freezing this, so I thickened it with a roux, and I added a little madiera to the mushrooms, and used Veggie broth. Very Rich and flavorful.I will make it again.

Moong Dal

I'd like to chime in about the aesofetida. It is also labeled "Hing" and you can find it in most ethnic stores. My Indian buddies tell me that lots of Indians won't even have the stuff in the house (It's really kind of overwhelming). I don't particularly like it, so, be warned and go easy on it, it stinks to high heaven. Substituting onion powder (with a little garlic powder thrown in) is a great idea.

Oven Roasted Potatoes

Everyone always likes these. I also throw some baby carrots in there too. The variety of spices makes the final spice mix pretty flexible (if you're missing 1 or 2, you can substitute with what you have on hand.)

Slow Cooker Sauerkraut and Sausage

This was fairly average in my opinion, but I served it at a party and it was gone in a few minutes and I got several compliments (I trippled the recipe for the party). This was SUPER easy and very economical. My complaint was, that I did add a few (3 small) diced potatoes to this (as someone suggested) and after 3 hours on high, they weren't finished cooking, so it went another hour or two on low, and by then, the potatoes and kraut were done, but the sausages were WAY overcooked. I think next time I'd add the sausages in the last 2 hours of cooking, and then everything would be done at the right time.

Hummus Club Sandwiches

The recipe was great, although it was a little too garlic-y for most of my party guests. I ended up adding 6 T. of Yogurt to try to "tame" it when I checked the taste, and although it didn't make it any less garlic-y, it did enhance the flavor and texture. I'll just use less garlic next time (you can always add more, but you can't take it out...)

Cranberry Apple Pie I

This was great. Much more exciting than plain apple pie. I will definitely be making it again. I was also glad this called for fresh cranberries, since most others I found called for canned cranberries. I think I added more apples than the recipe called for (6 apples is not very descriptive as apples come in all different sizes) so it looked like a 50/50 mix of cranberries and apples. After the pie was filled I baked the leftovers as you would an apple crumble and it was also great. This was more than enough strusel topping, and that next time, I will add some chopped walnuts
