Jamaican Jerk Dry Rub

This was a good base recipe! We just reduced the serving size to 20, and then modified the salt and the cayenne pepper so it wasn't too salty and spicy! It reminded us of our honeymoon in Jamaica where we had the best seasoned lamb legs ever. Thanks for sharing!

Mini Cheesecakes I

I made these for a friend's birthday and they were easy and great. I added cinnamon and nutmeg to the mixture and blended it well. I also found by the fruit section, a cream cheese fruit dip, which I used as a topping to the mini cheesecake. I then placed either one raspberry or one blackberry on top. It was a nice, fresh, and yummy treat - it also displayed very well. If you're travelling, then you'll want to put the fruit dip and berries on when you arrive to your destination. I had problems with the mini-muffin liners being too big, so I just sprayed extra baking spray and used toothpicks to free the cupcakes from the edges and then placed them in the mini-muffin liners.

Easy Slow Cooker French Dip

This is a keeper - very simple. Used the Knorr French Onion Mix and added sliced shallots and chopped garlic. Served on hoagies and on onion rolls with side salad. For special treat, fried some frozen waffle fries in peanut oil. This made ten servings for us.

Bacon and Tomato Cups

Recently made this again. I had some leftover puff pastry sheet and cut those into 12 squares; substituted a mix of asiago and mozzarella cheese - came out yummy! Thanks again!

Six Can Chicken Tortilla Soup

Followed the advice with tomato paste, cilantro, taco seasoning and sour cream. Added green onions. Sliced up some flour tortillas into strips and fried it in olive oil. Instead of canned chicken used Louis Rich's italian seasoned grilled chicken strips. Served with lime-seasoned Tortilla chips. Yum!

Lasagna Alfredo

Excellent recipe! Thanks for sharing the idea. I wanted to cook for a friend who just had a baby and needed a good recipe that didn't have tomatoes, garlic, and other stuff. So based on my options, I tried this recipe out. It worked out great. I cooked the chicken, but added some spices for flavor, pepper, onion powder and garlic powder. I used canned spinach (and drained it) due to limited time. I followed another user's recommendation and tossed it all together (alfredo, chicken and spinach) and layered mozz cheese from there. Tossed some parmesean on top. Omitted ricotta cheese b/c I don't like it... If you don't mind a green looking mixture, then you'll be fine. It was enjoyed by everyone!

Easy Decadent Truffles

This was a great recipe and the first time I've ever made a truffle! I read everyone's review (thanks!) and cut down on the sugar and the chocolates. The combination I used was melted white chocolate sprinkled w/ toffee, melted chocolate w/ toffee and for the mint truffles, I used melted mix of andes mints & melted semi-sweet chocolate for the base & dipped them in melted semi-sweet chocolate (andes mints don't melt very well) and sprinkled with crushed peppermint candy. When dipping the truffles in melted chocolate, you have to be quick b/c the chocolate truffle will melt into the dipping melted chocolate. I gave these as gifts & I put 2 truffles (of each kind) in a cupcake cover and placed them in a wedding favor mesh bag & voila!

Asiago Sun-Dried Tomato Pasta

I've made this dish several times and have tweaked it each time. For a low-fat version of this recipe, I subbed the cream for fat-free half-and-half, used turkey bacon, added portabello mushrooms and sprinkled in some white pepper. The leftovers don't look pretty after being refrigerated, but it's still very tasty! Thanks for sharing!
