Cranberry Pistachio Biscotti
Don't bother using your hands with this sticky dough. Just use wooden spoon to scoop and make 2 long slender logs on the parchment. You can flatten the logs with the spoon once you have the logs in place. I used a medium olive oil, not light, and it came out great. I also used dried cherries instead of cranberries and made white choc sqiggles on them when done. Very good.
