Bourbon Whiskey BBQ Sauce

I absolutely LOVE this sauce!! I've made it many, many times and I usually double the recipe when I do. What I've learned is that, after simmering it (which I usually do for about an hour), is that pouring it into a blender, in batches, takes care of the chunky issue some reviewers don't care for. Another handy tip: save your old ketchup squeeze bottle to store it in! It's wonderful as written, but I have changed it slightly over the years by omitting salt & adding ground spices (such as ground mustard seed, paprika & chile powder) and I don't add the liquid smoke until I'm done simmering it.

Hawaiian Tuna Sandwich

Yummy! I prefer to use toasted English muffins instead of hamburger buns (I think they hold up better). I also sometimes add diced fresh jalapeƱo or Serrano pepper for a little more "kick".

Maple Cannellini Bean Salad with Baby Broccoli and Butternut Squash

I was looking for something different to do with my butternut squash and this dish definitely fit the bill! It was a hit!!! I followed the recipe as written except that I used the whole squash (it was a small one, but amounted to more than a cup) and I only used 1 tbsp total of maple syrup (personal preference). I had to substitute regular broccoli for the baby broccoli as I couldn't find any baby broccoli at the store. Once the dish was ready, I thought it could use a little kick, so I added a dash of red pepper flakes. That did indeed add another depth of flavor that my boyfriend and I really liked. I served it with cornbread and garlic chicken. I will definitely make this again, and I will keep an eye out for baby broccoli so I can use it next time. Thank you so much for this wonderful recipe!!!

Chicken with Chipotle

Yum! This had just the flavor I was looking for.. It was a bit salty, so next time I'll cut back on the chicken bouillon (I didn't add any extra salt). After blending the sauce & tasting, I decided to add an extra chipotle pepper, a bit of paprika & freshly ground black pepper for personal taste & added color. I do advise tasting before adding extra, though, as the heat can vary a lot in the peppers. I served it over rice, with streamed broccoli & a fresh salad on the side. The sauce flavored the rice nicely, too. This is definitely going into the rotation. Thank you for sharing this wonderful recipe!

This has been one of my GO TO recipes for years. It's easy, quick & tasty. I usually serve it over long grain & wild rice and add sliced scallions on top.

Hasenpfeffer (Rabbit Stew)

Oh my, this was AbSOLUTELY the the best thing I've eaten in many many weeks!!! My boyfriend started it while I was at work using some rabbit he'd gotten from a friend as a thank you for helping him slaughter 30 of them.. As others suggested, we substituted 1/3c finely diced onion for the shallot and seedless raspberry jam for the currant jelly (couldn't find any of either anywhere in town!). We also added a pound of fresh mushrooms. Otherwise, we followed the recipe as written and served it over mashed potatoes with a side of rosemary/honey glazed carrots & a fresh green salad. It was so good we nearly finished it off between the two of us IN ONE SITTING! Yum. Yum. Yum. Thank you for this recipe. I plan to make it again this weekend.

Mediterranean Roast Vegetables

I received a huge fennel bulb on Saturday and had been trying to figure out what to do with it when I found this recipe. I'm so glad I did!! It was MARVELOUS!! I added some of the fresh fennel fronds & used about a tablespoon of dried rosemary & left out the zucchini (didn't have any, but will definitely add it next time). My boyfriend gave it ten stars!! It's a keeper!
