Turkey Hash

I made this at my hubby's request... it's delicious! I used black pepper instead of cayenne. Will definitely make this again. (Keep thinking of the line near end of "A Christmas Story" when the Bumpis's dogs run off with their turkey -- "..no turkey leftovers, no turkey soup, no turkey hash!")

Pumpkin Crisp

This was good, but I think I was aiming more for a cobbler, so I'll have to keep looking for recipes. Next time I might use one 14-oz can pumpkin instead of 2 as the layers seemed off (too much pumpkin). Also, since it said to serve it warm, the next time I might refrigerate it first, then warm it later. Pumpkin stayed very hot for a long time, even though the rest cooled off more quickly. A very rich dessert.

Beef Stew VI

This was really great! I, too, added extra cornstarch; I also used the Better than Boulion and floured the beef before cooking in olive oil. I don't usually cook with dried Rosemary...not a big fan of the "stick" texture! But this was definitely tasty and will be made again & again.

Broccoli Casserole III

As always, I read everyone's comments before trying this... I used fresh broccoli, chopped and steamed a bit. I used up the cheese I had on hand (some extra sharp cheddar, and 1/2 a package of the shredded Sargento cheddar-blend). I had townhouse crackers, so I put them in the chopper (to the delight of my 3-yr-old son!), and mixed them with a couple of tablespoons of melted butter before spreading atop the chopped broccoli & cheese mixture. I baked it at 350 for about 35 mins. It was DELICIOUS!!! Will definitely make again.

Pecan Breaded Chicken Breasts

EXCELLENT! I needed a recipe for a pan-fried chicken, and I happened to have some pecans on hand. I always read the comments first, so I knew to boil the 6 chicken breasts first, and I chopped the pecans almost to a powder! The chicken was still warm when I placed it in a large ziploc bag with extra maple syrup, so I threw it into the freezer for a few minutes before coating it for frying (I wish the maple syrup was a bit thicker, may have to work on that). I used a little butter and olive oil to fry it (that's my oil of preference). It was absolutely delicious!! Served with (slightly-over)-roasted sweet potatoes -- marvelous together. Highly recommend to all!

Red River Beef Stroganoff

Made this for first time-didn't have enough beef, for one thing. I don't like onions much so I used minced onions...sauce was thin so I used the whole 16 oz container of sour cream! Mixed the noodles in and heated longer to burn off some of the liquid. I still felt something was missing, so I sprinkled a little cinnamon in--not sure that's what I was looking for, though! Will try again.

Banana Banana Bread

Delicious! I only had 2 bananas, which mashed to one cup, so I added 1 cup of applesauce! Also, as suggested below, I added 1 tsp. vanilla and 1 tsp. cinnamon... I also added 1 cup chocolate chips! It was enough to make two [8 x 4] loaves, and I expect it to go fast! WATCH THE BAKING TIME, THOUGH!

These are likely the best cookies I've ever had! Used only 1/2 tsp salt since I didn't have unsalted butter. No peanut butter cups either; used crunchy peanut butter and it added extra crunch. Perfect!

Pumpkin Bread

This is delicious! I skipped the cloves and used pumpkin spice instead of nutmeg. I even did a second batch using Splenda instead of sugar and it came out great! (In first batch I did 2 cups Splenda and 1 cup sugar---I think I like that blend best!)

Apple Bread

This is DELICIOUS! I didn't use nuts, and I used 1 & 1/2 cups of white sugar and 1/2 cup of brown sugar---even better than as written! I'll next try Splenda blends for my diabtetic father on his next visit!
