Easy Shake and Bake Chicken

Very good recipe. I used boneless, skinless chicken thighs. Turned out very moist with nice flavor. I ate leftovers the next day - just as good reheated in the microwave.

Beer Bread I

I love this recipe!! It is so simple and tastes great. I used all purpose flour with 1 TBL of baking powder and 1 TSP of salt. The only beer I had in the house was Miller Lite. I used 3 TBL of splenda/sugar mix. Turned out perfect. The flavor is stronger the next day after baking. I heat up a peice in the microwave for 15 seconds and top with butter. Delicious.

Easy Mexican Casserole

My parents were coming to visit, so I decided to try this. I don't care for pinto beans, but rather than substitute another bean I made the recipe as is. It actually tasted really good even with the pintos. Everyone liked it and had seconds! Great recipe.

Irresistible Irish Soda Bread

This is a great recipe. It was easy to prepare and smelled like buttermilk biscuits as it baked. Easiest way to make great tasting bread. No yeast, rising or kneading required. Love it!

Spinach Stuffed Chicken Breasts

Very good recipe. I omitted the chopped garlic and used garlic salt instead, since I don't like a heavy garlic flavor. The feta cheese that I used had basil and other spices in it. That and a sprinkle of salt on top did the trick. Will make this one again.

Pumpkin Cake III

This cake is delicious!! As recommended by other reviewers, I cut down the oil to 3/4 cup and added 1/2 cup applesauce. I baked it in a 9 x 13 baking pan for 30 minutes. I made a vanilla glaze (recipe on Allrecipes) to put on top. Was great alone or with the glaze.

Slow Cooker Chicken Stroganoff

My crockpot is large and oval shaped. The chicken, margarine and dressing mix had started to burn after 5 hours on low. It's probably best made in a regular sized crockpot. I also used Zesty Italian dressing mix - the flavor was slightly over powering. I did add about a half a soup can of water. The sauce seemed a little too thick, after adding the cream cheese and condensed soup. Overall, it was ok. If I try this again, I may double the recipe to fit my large slow cooker. I'll also stick with the regular italian dressing mix or maybe use the ranch flavor.
