Italian Style Chili

I made this with Boca veggie crumbles and added a can of great northern beans too. I used Barilla sweet pepper tomato sauce. Topped with Parmesan & cheddar. It was awesome!

Black Bean Hummus

Slow Cooker Beef Stroganoff I

This was fabulous after I made the recommended adjustments. I used cream of mushroom and cream of onion (because I couldn't find the golden mushroom). I used about 1 1/2 cups water, a packet of onion soup mix. At the end I added sauteed mushrooms and the cream cheese and a dollup of sour cream.

NILLA Tiramisu Cookie Balls

These are very easy to make and super delicious. They remind me a little of the Oreo balls but with a coffee twist. I would also compare them to eating chocolate chip cookie dough. Great recipe!

Amazing Pork Tenderloin in the Slow Cooker

This really was amazing. I used a 2.5 lb pork roast because it was cheaper and I cooked it in the crock pot on low for 8 hours. The meat was like butter. I would use half the amount of soy sauce next time though, the juice was a little salty for my liking.

Pumpkin Crumb Cake

This is so delicious. It is easy to make and is the best of both worlds -pumpkin pie-ish filling with a cake bottom. I used pecans on top. I will make this again for sure.

Pumpkin Toffee Cheesecake

The taste was good, but it didn't quite have the texture of a rich cheesecake like I prefer. It could have been because I bought the 1/3 less fat cream cheese though. I used graham crackers for the crust to save on fat. I would make this again.

Creamy Swiss Tuna Casserole

This is a quick tasty dinner. I added a clove of fresh garlic, about 1/4 cup milk, 1/2 cup frozen peas and melted 1 tbs butter and mixed with 1/2 cup breadcrumbs. I topped with breadcrumbs then the last five mins threw on the remaining cheese.

These are decent. They are not very sweet and the ratio of blueberry to crumb is not right. Double the blueberries and add cinnamon to the crumb mixture.

Slow Cooker Chicken and Dumplings

I add a can of cream of mushroom, a can of cream of chicken, 2 cups of chicken broth and sliced carrots, celery. I also throw in some frozen peas at the very end. This is so tasty and easy. I feel like bone-in chicken breasts work better than boneless.
