Chicken Nachos

Reviewed: Jul. 5, 2011
I used regular onions, fresh garlic and just paprika and cayenne for the chicken. Sauteed for just a bit in olive oil just enough to get the pink out of the meat. I had a jar of nacho dipping sauce, so I omitted the green chilies. I put fresh cut tomatoes to the last layer after the last layer of cheese and it came out so good almost as restaurant style.

Stuffed Mushrooms

I gave this recipe 5 stars just because of how fast and simple it is to prepare. I didn't broil them either. I put them in 400 degrees temp. for about 20 mins.

Sweet Corn Tomalito

Excellent! This has been my most desired recipe for a long time. I used to go to Chevy's just so I could have my Tomalito...Im sure some old employee gave this recipe away.

Fruit Cobbler

Reviewed: May 16, 2011
To make a mistake with this recipe one should be a very bad cook. I followed it through and read some of the others reviews just to see how I could use apples instead. I used fresh apples, 4 in total, and the result was amazing. I liked this recipe because it didn't ask for tons and tons of sugar. It's still sweet and no need for more sugar in any cobbler.

Basil Chicken over Angel Hair

Reviewed: Jun. 12, 2010
I honestly don't like any tomato based pasta sauce, but this one changed my mind completely. I suggest to use Roma tomatoes and don't cover the sauce with the lid as it tends to make for a more watery finish. But the flavor is out of this world. Note: I used 100% whole wheat pasta.

Simple Whole Wheat Bread

Reviewed: May 15, 2010
I use 100% stone ground whole wheat flour. Azazing recipe. I cut the recipe in half and still came out with two big loafs of bread. Follow the recipe to a T, no complications, a very soft moist texture.

Quick and Easy Chicken and Rice

Excellelnt recipe. Like some other reviews suggested, it was very easy to prepare. I used real broth instead and used some light cream to give that milk flavor. I also a didnt use the shrooms but added some black pepper which is a must for me.

I really enjoyed baking this bread. I did use the conventional method (knead and rise).

Oat Bran Muffins

Reviewed: May 8, 2008
I will give it a five because they are what I expected they would be: full of fiber and flavor. I used only whole wheat flour, brown sugar added a little bit more since my apple sauce was unsweetened. I also added like two more tbsp. of oil...

Banana Crumb Muffins

Reviewed: Feb. 1, 2008
Best muffins ever! I used oil, one cup of whole wheat flour + regular flour, all brown sugar, added nuts, and didn't need the topping. TIP: I used single muffins(no need for tin) foil paper. GREAT IDEA! No mess, no need for cleaning after! Loooove it!!!

Simple Scones

Reviewed: Sep. 18, 2007
Very good flavor. I used golden raisins. Don't omit the sugar on top of them right before baking. I used brown coarse sugar and cinammon. Also substitute 1 and 1/2 of the regular flour for whole wheat. Grandioso!!!

Bev's Chocolate Pie

Reviewed: Sep. 3, 2007
For me, this was way too sweet even when I reduced the sugar to 1 1/2 cups. The sweetness was so overpowering, that the chocolate flavor simply disappear. I wouldn't try this recipe again.

Grilled Eggplant, Tomato and Goat Cheese

Reviewed: Jul. 25, 2007
I gave it a five because it's easy to prepare, and I love goat cheese. My diet doesn't allow me to eat carbs, so this was perfect for me. Very tasty, wonderfull idea. TIP: If you can prepare them in a panini maker, it would be easier. Grill the eggplant separate first. Put them together at the end with the tomatoes also. Love it, love it, love it...

Oatmeal Peanut Butter Cookies

Reviewed: Jul. 20, 2007
I am always looking for recipes where I can add whole wheat flour to. This was one of them. I added more oats. Changed the white sugar for splenda. TIP: Instead of fork to mark the cookies, I used a meat pounder, the rough side, of course.

Tortilla Espanola

Reviewed: Jun. 18, 2007
I give this recipe 4 points because I think it's using too much potatoes. I love the idea of frying the potatoes more than boiling. Don't think you have to deepfrying them. Use enough oil to make them look shiny in the pan. Use mid to hing temperature and lower it when potatoes are golden. Add amounts of onions, and fry till they look clear and starting to burn a little. They should be crispy on the outside and soft in the inside. Lower your temperature when pouring the eggs. A burned tortilla doesn't have a good flavor. Never over cook it. Let it slowly love the pan and remove it right before it's completely done. The warmness remaining will do the trick of a cooked but still tender tortilla. ENJOY!!!

Libby's® Pumpkin Cheesecake

Reviewed: Nov. 27, 2004
I read one of the reviews given here that says "my toes tingled when I first tasted it", it is absolutely true!!! I took this cheesecake to a Thanksgiving dinner where we silently compete for best dessert and I completely won all the compliments from kids to oldest. It is a unique taste and texture that almost melts in your mouth, sweetness is perfect. My husband even said it was one of the best desserts I have ever made. NOTE: I added a 1/2 tspn. of ginger powder to enhance the traditional flavor.
