Soft Oatmeal Cookies

Reviewed: Aug. 28, 2012
best cookie recipe I've found. I recommend the full 10 minutes at 375 degrees and do 1/2 the oatmeal as old fashioned oats and the other 1/2 quick oats, otherwise perfect recipe.

Cinnamon Raisin Bread I

Reviewed: Jan. 18, 2008
great recipe. I didn't have 3 loaf pans so I cut the recipe down by a third. I had to shorten the baking time by 8 minutes - I wish I had taken about 12 off though. It was a little dark on top but was great in the middle and on bottom. I would try to measure my rectangle better the next time because when I rolled it up and then cut it into two loaves it was a little long for one of the pans and I had to scrunch the dough in the pan. The bread still turned out great but the scrunching made the middle of the roll loosen up a but causing a slight gap in the swirl. It gave it that homemade character so it was still good. The loaves didn't last long. Next time I'll buy a thrid loaf pan instead of cutting down the recipe.

Anadama Bread

Reviewed: Jan. 17, 2008
The bread had a great taste. Unfortunately I couldn't get it to rise properly. I tried three times (with brand new yeast -active and then the quick rise) and the bread just never took off. Next time I might double the yeast. Even though it was a little doughy in the middle it still made great french toast and grilled cheese sandwiches!

Simple Whole Wheat Bread

Reviewed: Jan. 17, 2008
So easy. I didn't change anything about the recipe except that I didn't have enough honey - I was 1/3 cup short. It still came out great. I only had two loave pans and I used a circular cake pan to make dinner rolls, they came out so good. Thanks for the recipe! We will definitely make this again.

Baked Macaroni and Cheese

Reviewed: Jan. 9, 2008
Great recipe and so easy to make. I topped mine with Saltines. My husband prefers Ritz but I loved it with the extra salty top. We will make this again! We served with a salad to make a well rounded meal.

Peanut Butter Fingers

Reviewed: Jan. 9, 2008
So good. I was considering not making the peanut butter sauce, I'm glad I rethought it. It wouldn't be as good without it. Easy to make, even with a 2 year old that wanted to do everything!

Too Much Chocolate Cake

Reviewed: Dec. 18, 2007
Very good. Rich but not too sweet. Next time I will serve smaller pieces because it has to be a million calories per cake! Sooo good. I also used mini chocolate chips but other than that followed the recipe exactly.

This is the best apple crisp I've ever had! We used Cortland apples and changed the water to 1/3 cup and it came out perfect.

Savory Chicken Breasts

Reviewed: Jan. 15, 2006
very good. We tried ours with stuffing and it came out great. The bake time however was way too long. I baked it covered for 20 minutes and then uncovered for about 15 and it was still slightly dry. I normally only cook chicken breasts for about 20 minutes total. Still a great recipe and we wil make it again but maybe with cream of mushroom soup or a tastier cream of chicken.

great recipe. The leftovers were still moist two days later. I've tried several cornbread recipes and I've finally found my favorite.

To Die For Blueberry Muffins

Reviewed: Sep. 20, 2005
Excellent muffins. The top is the best part. I suggest using muffin liners though. My muffins all stuck to the inside of the muffin pan. It may have been because we were to eager to get them out when they hadn't quite cooled yet! That didn't stop us from scraping crumbs with our fingers until the pan was completely clean!

Peanut Butter Bars I

Reviewed: Aug. 18, 2005
quick, easy, and delicious! I would use a little less graham cracker crumb and a little more powdered sugar. Regrigerate for about 30-45min, then cut into squares, then continue to refrigerate (if the chocolate hardens too much they are difficult to cut)

Brazilian Black Bean Stew

Reviewed: Dec. 24, 2004
Excellent dish. I made mine without the meat and added some GOYA "Refrito" (in the Mexican cooking aisle)and extra cilantro. I served it with rice and chicken, sauteed with garlic and lime juice. A beautiful meal with plenty of leftovers which my boyfriend ate twice a day until it was all gone.

Mocha Blanca Cheesecake

Reviewed: Dec. 24, 2004
My first ever cheesecake and it came out great. I skipped the topping. Next time I will drizzle some chocolate over the top and I would double the crust (might also be good with a graham cracker crust). I also turned the oven off after 40 min. and kept the door closed. Texture was perfect. This was a big hit with my boyfriend.
