To Die For Blueberry Muffins

I rarely review recipes, but I had to review this one! I changed the quantities so it would yield 12 muffins instead of 8 and substituted rice milk for the regular milk (dairy allergies in our house). The results -- moist muffins, delicious flavor and a crispy, crumbly topping. This will be my go-to muffin base!

Banana Crumb Muffins

My go to banana muffin recipe. I've educed the 3/4 c. sugar to 1/2 c. and still tastes great! I get 12 muffins out of the mix, too.

Hot Cross Buns

What a hit this Easter!!! I followed the recipe exactly except that rather than knead the bread for 6-8 minutes, I used the dough hook on my kitchen aid mixer and ran it on level 2 for 7 minutes. Worked like a charm! Delicious airy buns, fantastic icing with the taste of orange. Totally worth the effort -- this is our new Easter tradition. :)

Supreme Scalloped Potatoes

Delicious!! Made a few changes and it was a huge hit this Easter. First, I chopped an onion and 3 garlic cloves in the food processor and sauteed in a tiny bit of olive oil. Once it was fragrant, I added the butter the recipe calls for until melted. We eat organic, so I used about 3/4 c. of the Health Valley organic condensed cream of chicken soup, which is not thick like a Campbell's soup would be. To make up for this, I added about a teaspoon of flour (mixed into a little water to get rid of lumps) into the onion, garlic, butter, soup and sour cream mixture. I sliced the potatoes thinly and placed in a 9x13 glass baking dish sprayed with nonstick cooking spray. Then I layered the wet ingredients, shredded cheddar cheese and freshly grated parmesan. I made two layers and baked covered for about 35 minutes and uncovered for about 45 minutes until brown and bubbly. YUM! Can't wait for the leftovers tomorrow!!

Chocolate Crinkles III

As written, 2 stars for tasting more like the flour/egg than the chocolate. With my modifications -- FOUR STARS. Before rolling into balls, I made a little indent with my thumb and filled with either (1) a chopped up piece from a Kraft caramel candy square and 1 or 2 chocolate chips; (2) a little peanut butter and a couple of chocolate chips; or (3) a few white/semi-sweet chocolate chips. This made for 3 varieties of cookies with delicious surprises in the center that spread out into the rest of the cookie when bakes. As written, I wouldn't make again, but with my modifications, I'll return to this recipe over and over again!

Chicken Jambalaya

Really good! I added more cayenne because we like things spicy. Served with hot cooked white rice and a fresh avocado salad (chunks of avocado with salt, olive oil and vinegar topped with sliced purple onions) which helped take the edge off the spice. Delicious!

Orzo with Parmesan and Basil

Delicious! So easy to make, fresh tasting and everyone loved it. Will definitely be making it again. Served it with chicken breasts that I stuffed with goat cheese and sun dried tomatoes. Yum!

Slow-Cooker Chicken Tortilla Soup

This was delicious! Served it with reduced fat shredded Mexican blend cheese on top, Fage greek 0% yogurt (as a replacement for sour cream), fresh diced tomatoes and onions and fresh diced avocados. Husband loved it nad we ate it for a couple of days. Great dinner!

Pumpkin Cheesecake II

This cheesecake was delicious! To keep it from cracking, I baked it in a water bath. I glazed it afterwards with a sour cream glaze, sweetened with maple syrup. The guests loved it!!

Christmas Breakfast Sausage Casserole

This turned out delicious! I used 7 eggs, 6 slices of toasted white bread and 1/8 cup more of milk than the recipe stated. I was out of mustard powder, so I used 2.5 teaspons of grey poupon mustard instead. I also used the organic pork sausage links from Whole Foods (365 brand) and cut the links into thin slices. Also, I added one small jar of red pimentos sprinkled on top before I put it all in the oven overnight -- it added great color. The guests loved it, the house smelled delicious while it baked and it tastes great reheated the next day (trust me, I'm eating a piece right now!).

Cuban Ropa Vieja

This recipe is tasty, but for the purists out there -- Cubans do not eat tortillas, sour cream, cheese, etc. Ropa vieja would be served over white rice, with a side of black beans and fried sweet plantains. =) That's what I recommend -- I'm Cuban! =)

Picadillo

While this is good, it's not Cuban - traditional Cuban food does not have spicyness to it (so none of the peppers) and picadillo while traditionally having raisins and olives does not have almonds or sausage in it. It's a nice twist, but it's not exactly Cuban - maybe Cuban fusion. Good recipe, though.

Quick and Easy Fish Tacos

I have to admit - I was a bit skeptical at first given that you're using fish sticks, but the taste was great and it really saved time! My husband loved these. I will be making these again next week. Thanks for the great recipe!
