About this Cook
I have been cooking either as an assistant to my mother or on my own for at least 20 years. I enjoy cooking for friends/family and watching them enjoy my creations. That is the satisfying part! I enjoy reading cookbooks and gaining a better understanding for flavor combinations which always helps me when I make a dish.
My favorite things to cook
My favorite foods to cook are those that are people's favorite recipes -- my husband's chicken pot pie that he loves, my bananas foster french toast, my traditional Cuban recipes, thai food and my healthy versions of traditional favorites.
My cooking tragedies
When I was a kid my mom and I made a cake while on vacation and the cake half rose and half didn't -- it looked awful! It was so bad-looking that we named it the "Ugly Duckling Cake."

To Die For Blueberry Muffins
I rarely review recipes, but I had to review this one! I changed the quantities so it would yield 12 muffins instead of 8 and substituted rice milk for the regular milk (dairy allergies in our house). The results -- moist muffins, delicious flavor and a crispy, crumbly topping. This will be my go-to muffin base!

Banana Crumb Muffins
My go to banana muffin recipe. I've educed the 3/4 c. sugar to 1/2 c. and still tastes great! I get 12 muffins out of the mix, too.

Chocolate Crinkles III
As written, 2 stars for tasting more like the flour/egg than the chocolate. With my modifications -- FOUR STARS. Before rolling into balls, I made a little indent with my thumb and filled with either (1) a chopped up piece from a Kraft caramel candy square and 1 or 2 chocolate chips; (2) a little peanut butter and a couple of chocolate chips; or (3) a few white/semi-sweet chocolate chips. This made for 3 varieties of cookies with delicious surprises in the center that spread out into the rest of the cookie when bakes. As written, I wouldn't make again, but with my modifications, I'll return to this recipe over and over again!
