Chocolate Decadence Cake I

This is a specialty I am now known for. So easy! SOOO good! UPDATE: I see a lot of people complaining about the egg not being thick. My eggs never get thick and it's OK! Some people separate and whip up the eggs; I find that that gives air to the cake that makes it less like decadence and more like a mousse. Decadence is a dense, rich concoction. You want to whip the eggs to make sure they are uniform (without distinguishable whites or yolks), and you want to fold them in so as to not incorporate more air than absolutely necessary. Also, for those of you who find there's too much -- you're probably using a 9" pan; this recipe calls for a 10" pan. In a 10" pan the batter never even reaches half way up.

Elegant Turkey Stuffing

My brother, who hates stuffing in general, asks for more every year! This year I even made it in the crock pot! **Also, I use orange juice instead of liqueur. That may allay some of the complaints on the strong taste of alcohol and orange. Excellent results (and cheaper).**

Lentil Soup III

very yummy and ridiculously easy! I added the whole little can of tomato paste, so I don't know if that's a 1/4 cup. I also simmered it down to a stew-like consistency (about an hour more on way LOW). Excellent served in bread bowls. Will definitely make again.

Curry Salmon with Broccoli

I had to play "shake the kitchen" with this since I didn't have all the exact ingredients. I substituted apple juice for the white wine and Salad Dressing for the Mayo. It still came out fantastic. I lightly seasoned the rice (brown rice) with tumeric and celery seed. Delicious! I even used canned salmon! Will use this again!

Tortellini Soup

Mmmmmm. I added a can of black beans, drained; and one zucchini, quartered and thinly sliced. I also used the dry tortellini from Sam's. YUMMY.

Austrian Pancake

Mine didn't puff in the middle, but did nicely around the edges and uniformly in the middle. This recipe is AWESOME. My kids wolfed it down (they're 2 and 3). Definitely great in a cast iron skillet! UPDATE: I've made this recipe several times now and have found it works well with just milk (2 c. milk, no cream) and especially with canned milk. It's amazing, even in a pinch!

Creamy Baked Cheesecake

I did half lemon juice and half vanilla in the New York Style version of this recipe. I also added 1 Tbs sugar. I made 18 of these for our wedding cakes! Delicious and BEAUTIFUL.

Great Mac and Cheese

What an easy mac and cheese recipe! It uses ingredients I have on hand and doesn't take much more time than the box varieties. But OH! what a difference! This is extremely creamy and rich. I topped mine with some crushed goldfish crackers (for the kids). Make this!

Rice and Raisin Breakfast Pudding

Nice basic recipe. I noticed some complaints about not enough water to cook the rice... Um, the recipe calls for cooked rice, so the water is not to cook the rice. We're using leftover already cooked rice here. I specifically looked for recipes using leftover rice, so I was glad to find this one. Very versatile! Don't have raisins? Use another fruit! Use a different nut! Omit nuts! Change it around to your taste. It's a very forgiving recipe.

Simple Garlic and Basil Pesto

Good recipe. Easy ingredients (except the Brazil Nuts) make it easy to do when you get the gumption. Good flavor, though next time (and there will be a next time) I'll add maybe some pepper or more garlic or something. It just wasn't a strong enough pesto.

Feta Chicken Salad

Easy Hummus

Man, that was dumb-easy! I had a late-night hankering, but no lemon juice or jalapeño. I used some home made rosemary infused vinegar in lieu of the lemon juice and put a tad bit more garlic in. Mmmmmm.
