This is a great treat the whole family can enjoy preparing as well as eating! Great for a deviation from holiday cookies! I like that you can dip these in whatever chocolate your family likes!

Feta Chicken Salad

Nice, versatile recipe. I have also omitted the red pepper and added dried cranberries. They went very well with the Feta. I'll surely keep this as a base to play with.

Austrian Pancake

Mine didn't puff in the middle, but did nicely around the edges and uniformly in the middle. This recipe is AWESOME. My kids wolfed it down (they're 2 and 3). Definitely great in a cast iron skillet! UPDATE: I've made this recipe several times now and have found it works well with just milk (2 c. milk, no cream) and especially with canned milk. It's amazing, even in a pinch!

Oatmeal Peanut Butter Cookies

This is a fantastic recipe! The ingredients are things I always have on hand. I made these with home made peanut butter, which turned out FANTASTIC. Also, I only baked them for about 8 minutes, so underestimate then watch them. Crispy/flaky outside and soft inside. I'll be making these again!

Great Mac and Cheese

What an easy mac and cheese recipe! It uses ingredients I have on hand and doesn't take much more time than the box varieties. But OH! what a difference! This is extremely creamy and rich. I topped mine with some crushed goldfish crackers (for the kids). Make this!

Outrageous Chocolate Chip Cookies

I used home made peanut butter and 1 tsp vanilla. EXCELLENT cookies! Do not over mix once you add the dry ingredients! Just stir enough to incorporate. That'll help the cookies not to spread and/or fall.

Unbelievable Rolls

I am dumbfounded. I totally screwed this recipe up and these rolls were still good. Then, I had to make them again and they were amazing. This is a great first-timer recipe; if it's not fantastic the first time, it was easy enough and good enough to try it again. I couldn't believe how little time and effort they required. Truly unbelievable!

Quick and Easy Tuna Casserole

If for nothing else but the sheer ease of this recipe, I give it five stars. It's an added bonus that it actually tastes good! I used frozen mixed veggies instead of peas and it was lovely. This took less time than tuna helper!

Easy Hummus

Man, that was dumb-easy! I had a late-night hankering, but no lemon juice or jalapeño. I used some home made rosemary infused vinegar in lieu of the lemon juice and put a tad bit more garlic in. Mmmmmm.

Lentil Soup III

very yummy and ridiculously easy! I added the whole little can of tomato paste, so I don't know if that's a 1/4 cup. I also simmered it down to a stew-like consistency (about an hour more on way LOW). Excellent served in bread bowls. Will definitely make again.

Simple Garlic and Basil Pesto

Good recipe. Easy ingredients (except the Brazil Nuts) make it easy to do when you get the gumption. Good flavor, though next time (and there will be a next time) I'll add maybe some pepper or more garlic or something. It just wasn't a strong enough pesto.
