Slow-Cooker Chicken Tortilla Soup

Very good. My 4 year old complained about the peppers burning her tongue, but, as soon as they were picked out, she finished off her bowl. I started with frozen chicken breasts and just shredded when it was done. We added cheese and sour cream when it was served. Will definitely make again, but just leave out the peppers entirely.

Chicken Noodle Casserole

My family loved it! I added a little less onion than called for, but, based on the other reviews, added a little more spice. I used about 1/2 tsp of Italian blend seasoning as I combined the other ingredients, and a about 1/2 tsp of poultry seasoning as I poached the chicken breasts.

Jambalaya Pasta Salad

I just returned from a family reunion, and wanted to say thank you for this recipe. It received more rave reviews and recipe requests than any other dish there. I did take the advice of several earlier postings, and substituted frozen shrimp and cajun seasoning rather than the canned shrimp and regular salt. I also made one other substitution - I used pasta rather than rice. I realize that this is a rather large change, but the 8 ounces of penne pasta made for a wonderful pasta salad. I can assure you that I will be making this again in the future. Thanks again.

The Best Rolled Sugar Cookies

Absolutely fantastic!! Ran short on time and used my PC middle scoop, then stamped out the cookies. Not crumbly or dry like so many sugar cookies. Didn't even use icing and they tasted terrific. Thanks!

Awesome and Easy Creamy Corn Casserole

I was given this recipe by a friend of mine and absolutely love it! My husband now requests it every time we need to take something for a potluck or are having dinner guests. I like adding peppers to this, but, rather than taking the extra time to chop for it, I have started substituting Mexicorn for the regular corn. The 'something extra' this adds is terrific. I also melt about 1 cup of cheddar on this at the end of the baking time.

Cajun Chicken Pasta

Absolutely fantastic! I followed the advice of LESLEYSALYER and used 1 T of flour and 2% milk rather than the heavy cream. Used leftover grilled chicken, sliced it thin and added to the sauce. Added steamed broccoli rather than green peppers. Will be making again!

Mom's Best Peanut Brittle

Very simple! I was surprised at just how easy it actually was. I would not, however, attempt it without a candy thermometer. It changes temperature very rapidly and you would probably miss that. I do not even typically like peanut brittle, but this tasted fantastic. Will definitely make again.

Meal in Foil

Absolutely Ultimate Potato Soup

I added a few chopped carrots in the beginning (saute with celery), and a handful of shredded cheddar at the end. I also substituted milk for the cream and did not blend much of the soup. I only blended a few cups to thicken it a little. Very popular with my entire family.
