Sausage and Egg Casserole

Excellent! I doubled the eggs, bread, and cheese; used 3 1/2 cups of milk. Nice and fluffy. Definitely a keeper!

Slow Cooker Cilantro Lime Chicken

This was absolutely delicious! My whole family loved it, and I really loved how easy it was to make. The chicken shredded very easily after cooking all that time. I added extra cilantro (because I love cilantro) and next time I will add a bit more taco seasoning. I served this chicken recipe with shredded cheddar cheese in the tortillas, and offered sour cream, lettuce, avocado, and extra salsa on the side. This recipe is a keeper!

Bruschetta Chicken Bake

I thought this was good, but everyone else thought it was wonderful! This is now THE dish I make to bring to others (with new babies, illness, etc), and I am always asked for the recipe. I had so many wives calling me to tell me their husband insisted they get the recipe, that I now include the recipe with the dish.

Donut Muffins

According to all three of my children these were not good... they were AMAZING! My 15 year old daughter made these for her bible study group. They were very easy and quick to make. She made extras that were gobbled up by her brothers within minutes. This recipe is a keeper. Could have used just half of of the butter and cinnamon/sugar mixture for the coating, so we will use that next time. May try pumpkin pie spice or apple pie spice instead of nutmeg for a change, but the nutmeg level was fine as stated in the recipe. YUM!

Butternut Squash Bake

This was AMAZING! The only change I made was that I used crushed corn flakes & Italian seasoning instead of seasoned bread crumbs and did not add salt & pepper. This is SO good that my husband and kids immediately asked if I would make this again. Thank you!

Black-Eyed Peas and Tortillas

This is another favorite in our home. I use a pound of dried black eyed peas, soak them, cook them, and then adjust the recipe accordingly. We each eat 2-4 of these for dinner, then have leftovers for a couple days. (They are even better the next day!) I've made them with & without smoke seasoning. I like them with, but it is great either way. I also choose to use corn tortillas, but again that is just a personal choice. (If you DO use corn tortillas, you need to heat each of them on a very hot skillet before using them.)

Lentil Chili II

This is, without a doubt, some of the BEST chili ever! I've made this for our family, as well as two potlucks. There wasn't a drop left at the potlucks! Kids and adults both were eating it up and getting seconds. (I like to spice it up a bit more, but when I am cooking for a crowd I keep it right as the recipe and put a bottle of chipotle tabasco next to the the pot.) I've had several people who tell me that they "don't like lentils" try this and love it. I've given the recipe out many times! This is a regular now in our home!

Bean Burgers

There were a HUGE hit with my family. Even with my picky 14 year old! They were glad there were extras so they can have them for lunch tomorrow. They did take quite a bit of prep, but all the steps were worth it. (It will probably go faster next time I make them.) I made them exactly as the recipe called for, except that I used cornbread stuffing since that is what I had. This one is a KEEPER!!!

Sweet and Sour Meatballs

This was INCREDIBLE! My kids as well as my hubby stuffed themselves! I didn't tell them until later that I had used grape jelly in it. (I didn't have any chili sauce, so I found a recipe for chili sauce right on this site and made my own.) I might spice it up a bit more next time. They've already told me that they want me to fix this again!

Creamy French Dressing

I just made this and it is excellent! I also used balsamic vinegar (because I was out of cider vinegar) and love the flavor. Just be prepared for the color change if you do this! This is a new favorite. Thank you!

Bean Soup
