Broccoli Rice Casserole

This is very good and as long as you season your chicken properly it's perfect! I poached my chicken beasts well seasoned and diced after cooking. The broccoli I let live meaning I steamers lightly "no cover" so that there was still life. I did not have American cheese so I used the same amount of cheddar. My family (adult) felt it was great comfort food perfect for a early spring raining day in Michigan.

Erin's Indonesian Chicken

This was easy, and good, but it lacked the deep savory flavors of Asian dishes. Although the general population felt otherwise, I felt the peanut butter flavor was the front runner for flavor. I'm more a soy, sesame oil, garlic, sherry and black pepper girl. I did double the recipe and ate two small portions so it's not bad, I guess I expected more from the reviews.

Maple Salmon

I work late and when I get home there are many adult faces looking for their last meal of the day. This is a true keeper. How many recipes out there have less than 5 ingredients (S&P don't count)that are a true winner. This dish is totally simple, delicious and healthy using organic syrup and low sodium soy sauce. Try it will be your go to fast meal.

Penne with Spicy Chicken Sausage, Beans, and Greens

like others I had to use what was on hand. Whole Wheat Pasta, Chicken Andouille sausage, garlic, onion, and fresh from the garden tomatoes. Topped with goat cheese. This is truly awesome and we ant to try the arugula which would add the extra kick. I have adult kids (24 & 21) and they loved this. Servered with a whole grain bread to soak up the wonderful sauce!!!!!! Try, it is great!

Veal Scaloppini with Lemon Cream Sauce

Lite and flavorful. I added garlic to the oil prior to adding wet ingredients. I would serve the sauce on the side to allow those who are more calorie conscience to determine the right amount of sauce for themselves. Wonderful weekday meal with spark.

Seared Ahi Tuna Steaks

This is simply wonderful. The tuna melts in your mouth if cooked as directed. The pepercorns add just the right amouth of heat. I did not use salt, we substituted with Trader Joe's 21 salute which is a non-salt product. Served over a bed of lettuce.

Actually Delicious Turkey Burgers

Chocolate Cavity Maker Cake

This cake is a keeper which I made for my son's birthday last weekend. I took it up a notch and frosted it with cream cheese fronting. It is delightful and after I started to make this I realized that this was one of my mom's recipes that she always made when she when to a pot luck for it always impressed the guests

Funky Enchilada Casserole

I made this during the week and found that it was a little more time consuming than anticipated but it may have been that it was my first attempt at making the dish which is generally how it is. I made the dish as written and took the advise of another reviewer and omitted the corn tortillas from the dish and served with fresh made corn chips. This was absolutely a meal made fun as titled. The flavors were even more pronounced the next day. This is a keeper.

Baked Orange Roughy Italian-Style

This is excellent. The only modification, although not my style to modify then rate is that I added lemon pepper seasoning to the prep to the fish. The top is crunch and all so flavorful. This is a must try.

Sausage Pasta

This is an excellent supper for week nights. The only modification I made was to use fresh spinach versus frozen and added it to my colander prior to draining my pasta so that it cooked it slightly. This is a keeper.

Asparagus Cashew Rice Pilaf

I made this recipe for 12 and didn't alter the INGREDIENTS. My son referred to this as "the bomb". Since I have given this to many friend who have reacted the same. This is a perfect compliment for shish kabob. Thank you for sharing

Chicken with Asparagus and Roasted Red Peppers

This is supper yummy. I made the recipe with only few altercations, I only had boneless skinless thights added a little more garlic and topped with chedar only because I didn't have any white cheese in the house. This is exceptional. I served over 1/2 Carb penne pasta. Will do over and over.

Shrimp Linguine Alfredo

This is excellent! I sauteed the shrimp with the onion and garlic and removed to prevent over cooking. Once I added the half and half I added some of the cheese which was the thickener versus corn starch. I topped the pasta with the shrimp and poured the sauce over the shrimp which warmed them once again instead of over cooking them. This dish is excellent!
