Pastry Cream

I did this for the first time ever and it came out pretty well. I used light coconut milk (lactose intolerant) and egg substitute. Yeah I had my doubts. I think next time I will make sure to have everything right next to the stove so I will not miss a beat of stirring and whisking because it wasn't as smooth as I think it should have been, but all in all it tasted great. After cooling in the fridge for about 3 hours I put it into a graham cracker pie crust and topped with fresh blueberries and strawberries. Yum

Insane Oven Beef Ribs

Liked a lot. I did however marinade mine overnight in a similar sauce and then convection roasted. I then cut the cooking short about 15-20 mins and put them on the grill. Mmmmmm. They came out great. Juicy, tender and just plain Good.

Best of Everything Veggie Burgers

I did this recipe last night. I was hesitant at first thinking it would be complicated. First was amazed how easy it was to get together with what I already had. I did not grill (I live in Chicago and it was 30 degrees). I chose to bake then pan fry a bit. I also left out the chili powder and hot sauce because neither I nor my daughter can handle spicy foods. I added a tad bit of Worcestershire and Liquid Smoke to give it that grilled flavor. The rest of the recipe I followed. And they turned out very well. Mine fell apart a bit, so maybe next time I will add more egg and/or bread crumbs. But I was really impressed. I didn't miss meat at all and will make this again.

Blueberry Dump Cake

Wow! I am sitting at my kitchen table typing and eating this Wonderful recipe. It was incredibly easy, and awesomely good. Some whip cream tops off the goodness. YUM. Thanks.

Tasty Baked Meatballs

Wonderful. I made these a couple of nights ago for my boyfriend and for my mom. My boyfriend absolutely loved them, said they were the best meatballs he'd ever had. My mom just praised them! I made two different batches. One with ground beef/pork mixed together (for boyfriend), and one with ground turkey (for my mom and I). They were both tasty, moist and just plain delicious. The only difference in my opinion (I snuck a little taste of both), was that ground turkey meatballs seem to fall apart more and easier. I used fresh grated Romano cheese (was what I had). I made some sauce on the side for those who wanted, but mostly everyone just wanted the meatballs all alone. So with a salad and some garlic bread...it was a scrumptious dish. Thanks.

T's Sweet Potato Fries

Yummy! These are wonderful. And I thought my daughter wouldn't eat them because they were sweet potato's, but she loved them. The only change I made was using some garlic salt and using sea salt instead of regular salt. I did make the mistake of bunching them up a bit too much the first time, but used a bigger pan the next time and they are crispy and great.

Really Raspberry

Wow, this was wonderful. I told no one it had tofu and everyone that had it, loved it. I am not a fan of almonds, so I excluded it, but it was delicious. My second batch I added a little orange juice and honey.....YUMMY!

Smoked Sausage and Zucchini Saute

Great! A nice and different way to cook smoked sausage. In addition to the zucchini, I also added some pea pods and diced carrots. I was also concerned about the salt content, so I didn't add anything but a bit of pepper and fresh garlic. I have served this with rice, potatoes and sometimes pasta. It's quick, filling and very tasty.
