Caramel Corn IV

After our Halloween party, everybody wanted a snack. I tried this b/c this is what we had in the house. Incredible!! Best and Easiest carmel corn ever!

Brown Sugar Smokies

We made these for a Superbowl crowd that loves pigs in a blanket so when they saw these sitting next to the pigs in a blanket, they were skeptical. Well, what was left on the plate? Not these, these were gone in under half an hour. The pigs a blanket made it well past half time. Easy to make and a great recipe!

Mall Pretzels

These are even better than the pretzels at the Mall. You need to eat them the same day you make them so I used another user's advise and froze some. After freezing, you can take an individual pretzel out of the oven, run it under a little water, salt and bake the same as if you made the dough fresh. They were just as good as fresh.

Strawberry Torte

Made this cake over the weekend for a bbq - what a hit! Easy to make, beautiful in presentation and really delicious- this got rave reviews and several requests for seconds. I added sliced, fresh stawberries in the layers and used a previous cook's suggestion about cooking the frozen strawberries without draining and puree for the sauce - layered the sauce inside and on top.

Creamed Corn

After reading many comments for this and other creamed corn recipes, we made this for a family gathering, changing things quite a bit. It was a great hit. What we changed was this: Decreased butter to 2 Tbls to match the amount of flour, and added 1/2 chopped onion to the butter, cooking until translucent, to add some flavor, before blending in the flour. Next we replaced the heavy cream with whole milk, and only used 1 1/2 cups of milk and 1 1/2 cups of half n half. We reduced the sugar to 1 Tbls. and added about 1 1/2 Tbls of fresh gound black pepper. Used same amount of corn, cheese and salt. Once the mixture was bubbly, we cooked it for about 20 minutes, then turned off and when cooled, stored in the fridge in a covered, buttered casserole dish until the party (2 days later). Day of party, we brought the casserole to room temp in microwave, sprinkled some cracker crumbs (about 1/2 cup) mixed with melted butter (about 1 Tbls) over and baked at 350 degrees for about 25 minutes, until bubbly. Turned out really good.

Baby Carrots And Brussels Sprouts Glazed With Brown Sugar and Pepper

We severed this dish on Christmas Eve. I listened to an earlier reviewer and cooked the veggies closer to doneness I wanted them to be in the end and it turned out wonderful. (Also cooked them a day ahead) The sauce really compliments the brussel sprouts. I didn't think it did much for the carrots, but the addition of carrots did look pretty. I'll make this again, omitting the carrots.

Winter Fruit Salad with Lemon Poppyseed Dressing

Asparagus Wrapped in Crisp Prosciutto

Everyone who tried this wanted the recipe. We served this to a party of 12. We made enough for everyone to have 2 spears and could have used more. These were outstanding and very easy. Thanks for sharing.

Hot Artichoke Spinach Dip

This dip is soooo much better than the cream cheese and/or mayo versions. This is the only recipe I'll use in the future. Next time I will add a little more cream- it was a little dry. Could be because I added an additional cup of cheese on top and baked until that layer was browned. Yummm!

We tried this recipe for a Christmas Eve gathering. It was delicious. I followed the recipe exactly as stated. They are a bit of work and it takes practice to get the shape right, but it is worth it. There were no leftovers!
