Chicken Breasts with Herb Basting Sauce

This was very good. I don't keep skin on chicken and took it off for this recipe. It still turned out moist and the flavors were delicious!

Scallops and Creamy Pea Fettuccine

Overall a good flavor. It is a good thing that my husband loves peas, because there were way too many. Could have been great with only 1 cup. Also, the sauce was a little too thick. Some chicken broth would have been light and helped to keep it from being so heavy. Nice lemon, cheese, and chive blend.

Apricot Nectar Cake I

I've made a cake like this for years. I always add 1 box of Jello instant lemon pudding and pie filling with the cake mix. It turns out great! A good tip for the pan is to use granulated sugar instead of flour after greasing. Then you don't have the ugly flour residue on the finished cake. I use the juice of one whole lemon for the glaze. Delicious. When I have weekend visitors I make this and it just disappears!

The Best Meatballs

Great meatballs. Beats what I've been cooking for 20 years. I had Panko (Japanese bread flakes) so I used them instead of the Italian breadcrumbs which gave the meatballs a light texture. I also ground my meat twice using my Kitchenaid meat grinding attachment.
