Scottley's Basic Yellow Cake

I have a tea cake pan from Chicago Metallic and lost the recipe that came with it; so I found this one - NOT GOOD, at least not for tea cakes. It stuck to the pan (yes I prepped the pan properly) and my 11 yo daughter said it tastes like corn bread (which it does). I've decided to turn them into cupcakes for the second batch and hopefully it'll be ok. It tastes fine, but just not what I was looking for. I wish I saved that original recipe!!

Amish White Bread

This was my third loaf of bread I've ever baked and it's AMAZING. My first loaf I killed the yeast because I used water that was too hot. My husband took one bite and had to spit it out. (I used a recipe I found on StumbleUpon.) My second loaf was alright, but a little dense. I think I tapped it on the counter and destroyed the second rise. (The same recipe) This recipe is way better. I followed it exactly and it was delicious!! I will definitely make it again!

Real Potato Leek Soup

I've followed a few potato leek soup recipes, but i think this one is a favorite. I did make a few changes. I sauteed three chopped leek bunches in butter and garlic for about 5 minutes before adding the broth and peeled russet potatoes. While the potatoes were boiling, I melted butter and flour in a separate pan before adding milk to thicken it. I then added the milk mixture to the soup and let continue to cook. I then "hand mashed" the soup (I usually use a hand blender) and the soup came out perfect! Soup is hearty and tasty! Great for a cold rainy day!

Marinated Flank Steak

Eggplant Parmesan II

I have never been an eggplant fan, however this recipe has changed that! Made my own tomato sauce and used smaller homegrown chinese eggplants. Much easier to make than I had expected.

Oven Brown Rice

I own a rice cooker and have never cooked rice any other way. However, I was cooking Salmon with Pineapple Tomato Salsa and the oven was going to be anyway (highly recommend the salmon!). It took more than an hour (about 1.5) to fully cook however, but it was worth it. Light and fluffy! I also covered it with foil because I read reviews and didn't want crunchy rice. Will make again!

Salmon with Pineapple Tomato Salsa

I used Sockeye Salmon and my husband told me, "This one's a keeper!" Even my 6 year old daughter loved it! I made the salsa a few hours before cooking the salmon and let it sit in the fridge to infuse all the flavors. Fabulous dish!! Highly recommend!
