Tender Crisp Sugar Cookies

They are good! I just didn't find any crispness to them - I want to play around with this recipe to see if the size of the cookie had anything to do with the heftiness! These babies were thicker and heavier than I thought they'd be, even with proper creaming, etc. I did use my larger cookie scoop. --Regardless, they are good and a hit with everyone I've shared with. Plain, or even more fantastic with yummy chocolate frosting... Mine looked exactly like the one photo that currently exist for this recipe, just thicker.

Chocolate Cookie Buttercream Frosting

**LOVED IT** So easy, so fast, and just darn TASTY stuff! I made some sugar cookies (which, to me, are not very exciting but my BF loves them)... and wanted to make them more yummy. This was PERFECT! I loved how creamy it is; velvety goodness! Can't wait to use again. And again. And again.

Dad's Favorite Peanut Butter Cookies

I didn't expect to like these as much as I do! I have NO complaints. I was worried the cookies would crumble and break apart, because after I took the dough out of the fridge it seemed rather dry. Much to my surprise, they were so chewy and moist out of the oven and the next day. **I only had creamy PB. And I added PB chips. For fun, since I had them, I added some toffee bits to part of the batter and it really knocked them outta the park. I liked that it added a slight crunch and extra hit of sweetness. **Used the recommendation of dipping the fork in flour vs. sugar, as I didn't want sugary topping. These will be remembered when I need a TNT recipe!

Cajun Chicken Lasagna

Yummy! I made some modifications based on what I had, but I am confident you will have great results following the recipe, which is why I give it 5 stars even with my changes. Skipped the sausage and celery and used a variety of bell peppers. My only *complaint* is the method for cooking the chicken-I should've used my common sense but didn't: some pieces were kind of dried out because they were cooked thru and then baked... I would use a lower heat when cooking and be very careful to not overcook at all. **BUT it was still excellent!!

Easy Batter Fruit Cobbler

I tend to favor fruit "crisps" to cobblers, but this recipe may make me change my mind... it was insanely easy to put together, even though I was using fresh strawberries and peachs so I had to prep them. Ease of Prep + Final Dish = FABULOUS. Loved it with a little fresh whipped cream... hits the spot! While it's not the prettiest dish ever, it didn't matter... it received rave reviews! **Doubled fruit amounts and glad I did! Except I should've upped the batter a little bit... I wanted more of that too!

Burnt Butter Frosting

More appropriately named Browned Butter Frosting... (I wouldn't want burnt anything)! Deliciously unique flavor that complemented both the carrot cake and marbled cupcakes that I made. It was ridiculously sweet so I may make some modifications the next time I use this recipe, but it really had a nice rich flavor from the carmelization. Will keep on file for future recipes! Very versitle: I'm sure it would go nicely with many different flavors (banana, caramel, chocolate...) and treats (cookies, cakes, brownies...).

Creamy Chocolate Frosting

Perfection! Just want to keep eating it... had to frost the cupcakes so I would stop sneaking tastes =) Followed recipe, except used 1% milk (didn't want to open a can for just a few tablespoons since I was only doing half a batch). A keeper!

Simple White Cake

This recipe worked perfectly for me - just as written. I loved how moist it was, couldn't have been more pleased. Beats the pants off a cake mix =) **09-28-12: note to self: very good basic cake as written. quite tall 9x13 if doubled.

Red Velvet Cupcakes

WOW! Couldn't be more pleased, really! I was very happy with the taste and texture of these - I didn't think I was a fan of red velvet (if you're gonna eat chocolate, eat chocolate, right?!?!) Well, I made basically this recipe--used cake flour and only 2T cocoa. Frosted with 8oz cream cheese 2oz butter 1.5c powdered sugar Pinch of salt & vanilla... **AMAZING**

Cajun Corn and Bacon Maque Choux

Excellent! Just made a variation of this from a different recipe I found (pretty much the same... didn't have tomato and used red bell instead of green... and heavy cream in place of milk...). Excellent side dish to go with BBQs - loved the flavors! Can't go wrong with bacon!!

Wilted Spinach with Cherries and Goat Cheese

Wanting to have more than just steak and roasted veggies, I decided at last minute to give this a shot! Aside from skipping mushrooms (didn't have) and using gorgonzola cheese in place of goat cheese (again, didn't have), I followed this recipe and LOVED it! I was surprised how much the cherries added to this...tempted to skip it, but SO glad I didn't! I loved the sweetness and flavor it added to the other ingredients. What a wonderfully quick recipe that's adaptable to what you have on hand!

Roasted Parsnips with Mint and Sage

YUM! So happy to try this - I had parsnips from another recipe AND my herb garden is getting out of control with mint and sage. Initially, I was hesitant about the mint, but it really blends in nicely with the other ingredients...certainly doesn't POP like you might expect it would. The honey helped with the sweetness of the veggies (I added carrots because i had them peeled and cut already... glad I did for an extra burst of color!) Everything about this was perfect, in my opinion. Other than adding more veggies for more color/nutrition/variety, I wouldn't change a thing!!

Swanson® Greek-Style Beef Stew

Tasty!! I enjoyed the flavor the cinnamon stick added to the overall dish! I would like a thicker, gravy-like base... this recipe was a little too watery. Next time! =) I added a LOT of extra carrots and parsnips, which I love! Not something I will make regularly (which isn't saying much since I love trying new recipes too much to have things twice!) but something I could go to if I had beef chunks I want to use up!

Neiman Marcus Chocolate Chip Cookie

A good cookie - I enjoyed the hint of coffee and the little flecks of the powder that appeared in the cookies! Not a novice baker, I was surprised that I ended up with relatively flat cookies that did not resemble several of the other photos posted. Even chilling the dough did not seem to make a difference. They puffed up in the oven and then fell flat, except for the mounds of chocolate =) Still, taste good...not in a rush to make again, as I have some wonderful chewy chocolate cookie recipes on file already, but it's always fun to change it up and try something new!

Cinnamon-Topped Rhubarb Muffins

BF and I love these! They turned out exceptionally well - probably my new favorite recipe to make with rhubarb! That being said, I would suggest increasing the amount of rhubarb, probably to at least 2.5 cups to get more rhubarb taste. These muffins are perfectly moist and tender. I loved how beautifully they baked - they are WONDERFUL with the topping, which was excellent and so easy to make. I was SO pleased with the results and cannot wait to make again!

Strawberry Rhubarb Coffee Cake

Interestingly, I preferred this fresh out of the oven... and not as much the next day. It started tasting a little mushy and the rhubarb didn't shine as much as I would've liked... but overall, I cannot complain. The cake is great, perfectly moist and right amount of sweetness! The filling was delicious... I look forward to making this again--

Italian-Style Baked Crispy Chicken Breasts

A beautiful dish... simple yet delicately flavorful! I subbed plain yogurt for half the mayo. May I suggest not using as much lemon/lemon juice as it calls for? It overpowered the other ingredients - I enjoyed it but my BF wasn't as into it. Also - be sure to give the tops a light topping of olive oil... I skipped that step so the tops didn't brown and get crispy... Again, I didn't mind (save the cal/fat) but my BF would've preferred the crispiness. DO NOT skip the almonds! I was surprised how nicely they complemented the dish!

Strawberry Rhubarb Coffee Cake

I admit...it was still slightly warm before I got to the point where I couldn't wait any longer to enjoy a piece! INCREDIBLE! Really, no other coffee cake can compete with this. I KNEW it would be a winner with the way the filling and the cake batter tasted even before baking (yes, I sampled!). Really, there isn't anything I would do to change this recipe. At all. Except make a bigger pan of it =) I love the "old-fashioned" (or is it just "homemade") taste this recipe magically provides. Just can't say enough good things about it!

Chocolate Torte

Unbelieveable. Really. I will say that all I got to eat were the scraps from shaving off the tops of the cakes and samples of the filling and frosting... I made this to give away to someone who donated to a ride I'm doing. **Her feedback on it was that it is incredible. They were supposed to take it to a party but it didn't last just sitting there on the counter looking so pretty... I'm excited to make this for ME and eat a piece or two... It's more time consuming than open-box-add egg and oil... but OMG... worth every second of the time. =)

Pork Chops with Raspberry Sauce

Skipping the butter and the fresh thyme, I still was very pleased with this recipe! I loved the tartness of the raspberry sauce and it was so quick and easy... 5 stars for that alone! I really loved how nicely the dried thyme and sage went with the raspberry too. An easy way to make a lovely sauce for company that is sure to impress! Had the pork with salad...blue cheese, dried cherries, yum!
