Buttermilk Oatmeal Muffins

I was so pleased with this recipe! The buttermilk does wonders to produce a great tasting, moist muffin. I also like the brown sugar--providing a deeper flavor than white sugar.

Carrot Banana Bread

I barely let this cool before I took a piece to try... the smells oozing out of the oven made me so anxious to try a bite! It was SO good. I loved the flavor. I made some cream cheese frosting to drizzle on the top - that made it taste like carrot cake! I will say the carrot cake flavor seemed to be less later in the day, you start to notice the banana more. But it's still a delcious bread, nonetheless! Pecans are perfect for this, so don't leave them out! I toasted quickly before adding them to the recipe.

White Chocolate Fruit Tart

Just rating the filling: AMAZING! So good! I made a tart shell and had to find something to put in it. I happened to have the white chocolate chips, cream, and cream cheese so I went with this. Couldn't have been more perfect! I had strawberries to use up so I just used those. And since it's just two of us, I didn't use the glaze since we're just eating it piece by piece (leaving glazes on like that will make it gummy/goey after awhile and i didn't want that). I was a little worried when I added the cream to the chocolate because it seized up, but i kept with it and it smoothed right out!! Can't wait to use this one again!

Double Chocolate Cookie Bars

4 as written, a big ol' 5 with modifications. There would NOT be enough of a base if you made this in an 11x13 pan. I used 11x7 and it was perfect. Instead of using all the milk in the chocolate chips, I ended up pouring some over the top to help the cookies and chocolate chips stay in place (like what you do when you make 7-layer bars). It made the top not quite as pretty (you could see the milky color over the chocolate) but the taste is DiViNe =) Rich and wonderful!

Buttermilk Mango-Berry Crumb Cake

FABULOUS! As quoted by my boyfriend: this is probably the best coffee cake I've made yet. And I bake A LOT. I am SO pleased with how this turned out. I loved the texture and flavors...mango and blueberries go together very nicely in this recipe. I used the optional nutmeg (freshly grated, which makes a difference!). I added a little drizzle of cream cheese frosting to the top (it didn't stay on very well because it's a crumb-y topping, but whatev) and it was a nice addition. Can't wait to make again with all sorts of flavor variations!

Lemon Blueberry Drop Scones

Fabulous lemon flavor really came through even though I used plain yogurt...the glaze really amped up the flavor of these. I'd give these a 5 if they were as good the next day as they were fresh out of the oven... but they turned very soft and cake-like the next day (loosely draped with plastic wrap). The flavor still impressed my coworkers, it just wasn't as amazing as I had experienced when I sampled it right away.

Roasted Okra

I am always up for trying a new method of cooking... this just didn't do what I thought it would: carmelize. So, while I am able to overlook the slime factor, my bf (who is really good about my experimenting with new recipes) could not stomach this one... Add the slime factor to the meager seasoning and you don't get much. I think I'll keep looking =) but thanks for sharing!

Eggplant Snack Sticks

Easy to throw together, a healthy and tasty compliment to any meal or snack. I used an egg yolk (leftover from recent baking) and a little milk, that worked just fine. The only thing I'd do differently is choose a better Italian seasoning... I used Herbs de Provence and didn't love it (no fault of the recipe). I'd make again sometime.

Mini Tacos

Everyone loved these! This is SO easy to adapt to your preferences or what you have on hand. I had the round potsticker wrappers so I used those, I had chorizo (already spiced so I didn't need taco seasoning) so I used that. Then topped with cheese, diced tomato, and cheese, letting the guests add sour cream, salsa, and guacamole if they wanted to. Also, I baked the wontons, added the warm meat mixture, and popped in the oven for a few more minutes... then topped with the toppings. Everyone really loved it!

Thai-Style Peanut Sauce with Honey

After the fact, I realize the submitter wanted more peanut flavor... because that was the only thing I was going to say, my bf and I agreed it was a little much. Still, a great homemade recipe! Next time I'd probably use a little less of both the honey and PB to suite our preferences. Overall fantastic!!

Strawberry Bruschetta

Toasted a butered cinnamon-raisin bread, spred a layer of sweetened cream cheese (added Chambord for a nice raspberry undertone), and topped with sliced strawberries. Since the berries were in season, they didn't need sugar. This was delicious with the extra layer of cream cheese...simply delicious!

Banana Cupcakes

Moist and pretty good but didn't pack the banana flavor I expected (based on my personal review as well as a dozen or so taste-testers). I frosted with a chocolate buttercream frosting, which went over well... but a light cream cheese frosting would be nice too (not a huge fan of the plain frosting posted).

Milky Way® Cupcake Icing

Easy to follow recipe with ingredients I had on hand. I was expecting more Milky Way flavor - but it mainly just tasted like a sweet glaze. I just read Pam-3boysMama's review after seeing her photo: I think it's a great tip, to let the icing come to room temperature so it holds a swirl. It looks prettier than the glaze that just oozes down the sides. *Overall, fun recipe to try, just didn't pack the flavor I wanted/expected.

Dry Buttermilk Ranch Mix

Perfect! I love this - I just made a batch to use as a dip and I have some left in the fridge I'll use as a dressing. I love how easy it was to throw together and I can adapt to my preferences or what I have on hand (no dried chives, but I do have some in my herb garden I will chop up!). I've already shared the recipe with my family! Thanks for the recipe!

Jimmy's Mexican Pizza

Yum! I enjoyed this Mexican twist! A fun way to eat your basic burrito - we really enjoyed this! It's easy to adapt to your own taste preferences, or to adjust based on what you have on hand. I didn't realize I was out of refried beans so I just mashed up a can of white beans...worked just fine in this!

Lemon Zucchini Bread

A yummy zucchini bread recipe! I really enjoyed the citrusy component of the cake - so different from the recipes I've made before. I followed the addition Naples used too: dissolved sugar into lemon juice and used it as a glaze for the top...an extra pop of flavor that was quite a special touch!

I could've eaten all the raw dough... OMGoodness this was delish! I loved the perfectly chewiness and gooeyness of these little devils! I ran out of chocolate chips so I chopped a block of bittersweet chocolate that I did have. I liked it and my non-chocolate-fan-of-a-boyfriend will prefer it that way... but I think I missed the extra melty goodness more chocolate would've had. But DARN good. Wow... =)

Rhubarb Cake I

EXCELLENT! SO moist. SO flavorful. SO perfect. Ok, well, I do have a "complaint" that these didn't work as muffins (the topping was too heavy so it made caves into the muffins...which I covered up with homemade cream cheese icing, and made them look BEAUTIFUL!) Several requests for this recipe and for me to make again. Can't wait!
