Chipotle Crusted Pork Tenderloin
This is really delicious and very easy to make, but a word of warning- go easy on the chipotle powder! My husband and I love chipotle chiles, but even we thought this was too spicy. We could barely eat it when following the recipe, so the next time I made it I cut the chipotle in half.

Best Tuna Casserole
This definitely reminded me of the tuna noodle casserole my mom used to make. I used one can of fat-free cream of mushroom soup and a can of cream of celery. I added about half a cup of water so the soup mixture wasn't so thick. I also used panko breadcrumbs instead of potato chips to cut down on the fat a bit. I wouldn't say it was dry, but it was still a bit "thick" from the soup. Next time I'll use a little more water or milk. But overall, very tasty recipe.

Tofu Parmigiana
This was my first time cooking tofu and this recipe was surprisingly good! I'll probably use extra firm next time; had a problem with the tofu breaking apart. And I used regular spaghetti sauce instead of the tomato sauce. Even my husband, the staunch carnivore, was impressed. Tofu doesn't seem so scary anymore!
