Quick and Easy Clam Chowder

This is a darned good clam chowder. I used 4 small cans of clams (plus the juice of 3), 2 cans potato soup, 1 can celery soup, and one can of bumble bee clam chowder mixer. I also used only one pint of heavy whipping cream. Threw in two healthy handfuls of roughly chopped new potatoes and 1/2 a chopped onion. About 1 and a half tsp of white pepper and a toasted bread bowl did the trick. Double YUM.

Smoked Salmon Pasta Salad

I made this recipe because it's so flexible. I was short on a few things and got to use up some misc items that were hanging around the fridge. I didn't have lemon juice, so I used olive oil to cut the mayo instead. It did the job just fine. Also, since I didn't have celery, I added a generous handful of frozen peas and cut up three canned artichoke hearts and a small on-the-vine tomato (seeded). I am a real sucker for any kind of pasta salad, and I loved this recipe. Will surely make again.

Vegetable-Stuffed Portobello Mushrooms

This recipe is so flexible and that makes it fantastic. Like many other reviewers, I needed to be a bit creative about what I had in the fridge. I used only 1/2c balsamic vinegar and still had some to spare after marinating. Instead of frozen spinach, I used about 5 leaves of chopped fresh kale, omitted the tomatoes, added in some button mushrooms, swapped shredded jack and cheddar for mozzarella, and I LOVED it!

Slow Cooker Chicken Stroganoff

Sweet Potato Chili

I left out the water and salt. Used a 1/2 teaspoon for everything that said "pinch." If you love spicy chili like I do, add a jalapeno for good measure.

Spinach, Red Lentil, and Bean Curry

It's not spicy, but I thought the flavor was great. Not every dish needs to be spicy. I used Tandoori Masala instead, and 6 oz of frozen cut spinach. Next time I might use more spinach since I love it so much. It's fantastic with warmed naan.

Aunt Millie's Broccoli Casserole

I followed other reviewers and added an extra can of cream of chicken, plus about 1/4 c of milk. I also tossed in a handful of crumbled bacon, and used Ritz crackers plus shaved Parmesan for the topping. This is a great comfort food.

Baby Greens with a Warm Gorgonzola Dressing

I used goat cheese because the grocery was out of gorgonzola. I also added one thinly sliced shallot to the mix. I also doubled the amount of sliced almonds for extra protein. If I make this again, I will probably cut the sugar in half as I do not favor sweet salads.

Marinade for Chicken

This is the perfect chicken marinade. If you cut the recipe to 16 servings, that's about right for a 4 lb butchered bird.

Quinoa with Mushrooms

I made this one according to the instructions (with a slight embellishment on the cheese and added pepper to taste). I had no problem with the liquid to dry ratio nor cook time. It's an earthy tasting dish, which is great for a comfort food that is very high in protein. I only gave it three stars because it wasn't the kind of slap-you-across-the-face deliciousness that I have found in other recipes on this site.

Brown Sugar Smokies

I served these at a party and the group went wild for them. These were more popular than the gourmet cheeses and expensive wine. Go figure. When I made them, I put 5-6 on wooden skewers, then simply cut the skewers into mini-sized toothpicks when filling the round heated serving dish. I have a convection oven and set it to convect-roast to ensure the bacon would brown.

Best Beef Dip Ever
