Fluffy Swedish Pancakes

Loved it! Added teaspoon of vanilla. Served with a little bit of jelly rolled in it. And a teeny tiny bit of maple syrup, but it really wasn't necessary. Update: we made these again and filled with a cream cheese/apricot jelly mixture. YUM! Didn't take much of the mixture. Served without syrup. Also made it on our large electric griddle - could make more at a time. Poured 1/4 cup of mixture and gently spread with back of spoon. Didn't need much spreading because the batter is so thin - really just did it to round them out a little.

Boston Cream Pie II

Loved the cake and the custard. Having made this twice, not sure about the chocolate. Might try the one below from a Tuxedo cake I've made a few times, found on Pinterest. Followed one reviewer who suggested upping the serving size of the cake to 18 and dividing the batter between two 9" pans. Used insulating strips to keep them from humping in the middle. ***Remember to line the pans with parchment. Mine stuck horribly. The cake wasn't so pretty because of that, but it sure was good! Might try this chocolate topping next time: For the chocolate topping: 4 oz. bittersweet chocolate, finely chopped ½ cup heavy whipping cream ¼ cup light corn syrup 2 tsp. vanilla extract To make the frosting, add the heavy cream to the bowl of an electric mixer fitted with a whisk attachment. Whip on medium-high speed until soft peaks form. Add the powdered sugar and continue to whip until thoroughly combined and stiff peaks form. Be careful not to over-beat!

Irish Cream Liqueur II

Super yummy! Just made it tonight so haven't tasted it after letting it sit yet. Used one can of sweetened condensed instead of two. Sweet enough with one! Use 3 cans of evaporated, and upped the coffee granules by a teaspoon. Also added 1/2 teaspoon pure vanilla syrup.

Oatmeal Strawberry Bread

Fabulous! Used mods recommended by others: subbed 1 c brown sugar for 1 cup of the white sugar; used 1 c applesauce in place of a cup of the oil, used larger loaf pans. Baked for 60 minutes. Amazingly good with great strawberry flavor!!!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

These were SO SO GOOD! I made my favorite chocolate cake recipe and those take about 20 minutes to bake. I was worried about overcooking the cookie balls, so I left them in the freezer and popped the cupcakes in the oven for 4 minutes. Took out one tray at a time and my daughter dropped a cookie ball in each and then I put them back in the oven. Not sure if this made much of a different, but they were AWESOME. Seriously. I piped on whipped cream cheese frosting (recipe from this site). Amazing. Everyone loved them.

Pure Maple Candy

These were great! Having read all the reviews, I expected the times to vary widely from the instructions, but I found the times were just about right for me. The candy is yummy! Made a dozen trees from the Wilton silicone tree mold (filled about 3/4 of the way). It is very soft, but holds its shape (so far at least). Interested to see how it holds up after a few days. Note: it did take a while to get to 235 F, and it was tricky finding a balance with the heat, making it hot enough for the temperature to (slowly) rise, but not so hot it boiled over.

Barbie Doll Cake

I made a double recipe of my fav chocolate cake. Baked one recipe in Kitchenmade mixing bowl, heavily criscoed and floured. Took almost 2 hours to bake! The second recipe I divided into two 8" cake pans, and baked 55 minutes or so. Cut off the domes of each, stacked - fit perfectly! I bought a Wilton cake doll for about 3 bucks, but didn't like her head so temporarily replaced it with one of our other princess heads.

Whoopie Pies III

These were really good! The cake part is great. The filling I ended up adding the whole 7 oz of marshmallow creme and probably and extra 3/4 cup (or so) of powdered sugar. This helped bulk it up so I had just enough to fill all of them.
