Fluffy Swedish Pancakes

Loved it! Added teaspoon of vanilla. Served with a little bit of jelly rolled in it. And the teeny tiny bit of maple syrup, but it really wasn't necessary.

Boston Cream Pie II

Loved the cake and the custard. Might make the chocolate a little thinner next time. Followed one reviewer who suggested upping the serving size of the cake to 18 and dividing the batter between two 9" pans. Used insulating strips to keep them from humping in the middle. ***Remember to line the pans with parchment. Mine stuck horribly. The cake wasn't so pretty because of that, but it sure was good!

Irish Cream Liqueur II

Super yummy! Just made it tonight so haven't tasted it after letting it sit yet. Used one can of sweetened condensed instead of two. Sweet enough with one! Use 3 cans of evaporated, and upped the coffee granules by a teaspoon. Also added 1/2 teaspoon pure vanilla syrup.

Oatmeal Strawberry Bread

Fabulous! Used mods recommended by others: subbed 1 c brown sugar for 1 cup of the white sugar; used 1 c applesauce in place of a cup of the oil, used larger loaf pans. Baked for 60 minutes. Amazingly good with great strawberry flavor!!!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

These were SO SO GOOD! I made my favorite chocolate cake recipe and those take about 20 minutes to bake. I was worried about overcooking the cookie balls, so I left them in the freezer and popped the cupcakes in the oven for 4 minutes. Took out one tray at a time and my daughter dropped a cookie ball in each and then I put them back in the oven. Not sure if this made much of a different, but they were AWESOME. Seriously. I piped on whipped cream cheese frosting (recipe from this site). Amazing. Everyone loved them.

Pure Maple Candy

These were great! Having read all the reviews, I expected the times to vary widely from the instructions, but I found the times were just about right for me. The candy is yummy! Made a dozen trees from the Wilton silicone tree mold (filled about 3/4 of the way). It is very soft, but holds its shape (so far at least). Interested to see how it holds up after a few days. Note: it did take a while to get to 235 F, and it was tricky finding a balance with the heat, making it hot enough for the temperature to (slowly) rise, but not so hot it boiled over.

Barbie Doll Cake

I made a double recipe of my fav chocolate cake. Baked one recipe in Kitchenmade mixing bowl, heavily criscoed and floured. Took almost 2 hours to bake! The second recipe I divided into two 8" cake pans, and baked 55 minutes or so. Cut off the domes of each, stacked - fit perfectly! I bought a Wilton cake doll for about 3 bucks, but didn't like her head so temporarily replaced it with one of our other princess heads.

Whoopie Pies III

These were really good! The cake part is great. The filling I ended up adding the whole 7 oz of marshmallow creme and probably and extra 3/4 cup (or so) of powdered sugar. This helped bulk it up so I had just enough to fill all of them.

Pumpkin Pie Squares

I shortened the crust cooking time by 5 minutes based on other reviewers assessment of hard crust. Added a dash of nutmeg and a dash of molasses to the filling. Had to bake an extra 10-15 minutes to set the filling - maybe because my organic canned pumpkin seemed less firm than regular canned pumpkin.

Perfect! Pipes beautifully. Use 1M, hold straight up and down. YUM!!! Used regular sugar (not powdered) and it came out smooth and creamy.

Chocolate Pretzel Rings

Like so many others, I couldn't find those darn pretzel rings (after looking at SEVEN stores) so settled on the checkers ones. The Hersheys hugs did great - there is literally a 15 second window of perfect meltiness. In my oven, it was 2 minutes, 45 seconds. 15 seconds less and it was still hard in the middle, 15 more and it was too melty. For some reason, my milk chocolate ones would NOT melt. Ever. They went from hard to cooked. Very odd. The peppermint ones were yummy, but did not hold their colors as well as the hugs. I used regular Cmas themed m&ms and also mint ones. The regular m&ms got a little chalky colored and lost their gloss - maybe because I put them in the freezer to cool? The mint ones I cooled in the fridge and did NOT loose their color or gloss. All were yummy though! Will make again.

I messed with this recipe a bit. I used 1/2 c. sesame seeds (toasted in a skillet), 2 eggs, and 1 1/2 cups flour. No salt. They turned out so great! Very butterscotchy, and not as lacy as this recipe seems to yield. Must be the extra egg and flour that does it. Baked at 350 for 8 minutes. They were crunchy on the outside, chewy on the inside, and totally divine.

Cinnamon Roasted Sweet Potatoes

Great! My kids LOVED this (and they don't love much). Used 2 T olive oil, cubed two sweet potatoes. Didn't need to drain on paper towel with the amount of oil I used.

Fortune Cookies I

Followed directions exactly. Spray pan, wipe before spreading batter. Have a helper put the fortune down for you to save time. I did two cookies at a time. If they get too brown, they'll crack, but too white and it'll be chewy. Use a mini-muffin tin to hold the ends in place til cool. Beautiful! Best when eaten right away. They got really chewy - never really got crunchy like the ones from restaurants.
