Turkey Pot Pie I

This was yummy! I got a turkey on sale in May and was wondering what to do with the leftovers. This pot pie tasted even better than the first day of roast turkey! I took the advice of others and doubled almost tripled the turkey meat, used 2 cups of chicken broth b/c I didn't have bouillon cubes and didn't have oregano so substituted with italian seasoning. I used a trader joe's pie crust to top it off and baked it in a pie dish. It was seriously delicious and can't wait to make it again!

Downeast Maine Pumpkin Bread

This bread is seriously awesome! I had a leftover 15oz can of pumpkin and so I made this. The substitutions I made: As other reviewers have suggested I used 1/2 applesauce and 1/2 oil for the 1 cup of oil and I used 2 cups of wheat flour and 1.5 cups of white flour as well as 2 cups of brown sugar total for the sugar content. This was sooo good. And you cannot tell that there is whole wheat flour in this or less sugar or less oil. It came out moist and stayed moist for at least 3 days when it was fully devoured by the family. I'm honestly not a pumpkin food fan or "healthy" eating fan but this made it easier to get dessert and not feel too guilty about it. Thank you for this great recipe!

Lebanese-Style Red Lentil Soup

This soup is awesome. It tastes great and it's healthy. I've been looking for more recipes to incorporate healthy ingredients and this fits the bill. I ran out of cumin and added 2 carrots, and it tasted delicious. Thanks for a yummy recipe Jenp1.

Chicken Andouille Gumbo

I've only had gumbo once before and it was at a cajun place in Santa Barbara so I do not know what authentic gumbo tastes like. Taking that into account, my family really liked this recipe. I made it as stated and I used "fresh" andouille sausage. I had read somewhere that andouille by definition is smoked but for some reason this one was not. (bought at uli's at pike's market) I even found the file powder at world spices near pike's market which I was ecstatic about b/c it was hard to find at local chain grocery stores. Anyhow, we did find it a bit spicy so next time I would tone it down maybe 1/4 of what it asks for but that is personal preference. It makes a lot so if two people are eating it, be prepared for lots of leftovers. I would recommend adding the okra last, maybe even the next day if you are making it a day ahead. It fell apart by the time we ate it the next day as I made it ahead of time. The roux took about 25 minutes to darken a golden brown. Next time I will darken it more to a milk chocolate color. I'm making it for a mardi gras party next week so hopefully it will go over well with the crowd. Thanks for a great recipe.

Baked Pork Chops II

This is a nice variant from the mushroom soup pork chop recipes that have been dominating in our household. This is a great recipe that produces a tender, moist pork chop. The only thing I did different was add a teaspoon of garlic seasoning and added 2 tablespoons of lemon juice instead of one. Thanks for a great recipe!

Buttermilk Honey Wheat Bread

A good basic and moist wheat bread recipe. I followed another reviewer's directions and these are the changes I made: let the yeast mix in 1/2 cup water (105 degrees) with 1 tbs sugar, reduced the buttermilk to 1 cup, added 1 tbs gluten (since I had it and it seems to make my wheat breads taste a bit better) and let it rise in the oven with the oven light on. I kneaded it in my kitchen aid with the dough hook for around 4 minutes before it overheated and gave off some wierd smell. But that aside, it was kneaded enough and then I let it rise. It did rise slower then my other breads but it came out perfectly, dome shaped, and a nice brown crust. I did bake it for 20 minutes at 350 degrees instead of 25 minutes. It was very moist and tasty. Canadian Barn BBQ Sauce

It was too sweet for my family and I reduced the sugar to 1 cup of brown sugar. I'm not used to sweet bbq sauces. This isn't a keeper for me, but thanks for posting the recipe. I'll keep searching.

Chicken Parmigiana

This receipe is very easy to make which is great when you are have little time to cook! As others suggested I added garlic salt,garlic powder, basil, oregano, and parmesean cheese to the bread crumbs. Other than that..I followed the recipe and the family loved it. Thanks!

Breakfast Casserole II

I have made this 3x and each time people have loved it and have asked for the recipe. It's a great recipe for a breakfast potluck or for a large family. Cut it in half if it's for people less than 6. Thanks for a great recipe Sue!
