Zucchini Casserole II
This is a simple and quick recipe that you can add/modify and still come out delicious! I made this for dinner tonight. My husband and kids loved it! I used cream of corn instead because I didn't have cream of mushroom. I substituted Greek yogurt for sour cream, once again I didn't have sour cream. I also used crashed unsalted saltine mixed with Italian seasoned breadcrumb instead of bread stuffing. As you might have guessed it, I didn't have it at the time of cooking. :) So, as you can see, you can vary the ingredients and can still come out great! I don't like raw onions so I wanted to make sure it is cooked through so I cooked onions and zucchini with butter and chicken stock for about 15 mins. I also added 2 hot dogs from the left over. I may have varied the original recipe a bit but this is a great recipe to use as a base. :) Definitely a winner in my book!

Chunky Cheesecake Brownies
It is such an easy brownie recipe. So yummy and moist! I made it for Father's Day and my husband thought I brought it from the bakery! I followed the recipe pretty much as it is except I used mini chocolate chip in the cream cheese batter vs. 1 cup of semi-sweet. I used 1/2 cup of bittersweet and 1/2 cup of semi-sweet and no complains from the family. I served it with vanilla ice cream and homemade whipped cream with chocolate syrup and raspberry. No more brownie mix from the box anymore!!

Blender Hollandaise Sauce
Overall I think it is very good. Very easy to make but make sure the butter is not just melted but hot; otherwise, it doesn't thicken. Also, the amount of butter has to be 1/2 cup as well. The only reason I gave it 4 stars vs. 5 is because we found it too lemony. Next time, I'll reduce it by 1/2. I don't have Dijon mustard so I used Ballpark mustard instead and it still tasted fine. I also added a little salt at the end. I'll definitely use this recipe again!
