Weekend Brunch Casserole

My family loved it! My husband and oldest son (12) hate casseroles, so I was not optimistic when I decided to make it. But I needed something quick for dinner that used the sausage I had on hand. It was such a hit, that they both asked for seconds!

Cranberry Cherry Pie

It was very easy to make, but didn't suit my tastes; mostly due to the texture. The texture of the whole pie ended up like the whole cranberry sauce, but I prefer it smooth like the cherry pie filling. Maybe it was the brand of cranberry sauce I used?

Goat Cheese Stuffed Lamb Burgers

Very good! I shaped the burgers in an oval shape so we could wrap them in pitas easier. Note: I did not add as much salt as the recipe called for-- it just seemed like too much. Is it a typo maybe? I used about 1/2 tsp. and it was fine (and I like my food salty!)

Better Than Best Fried Chicken

It was pretty good. My kids loved it (7 & 11), but I thought it was just a bit better than OK. I added some extra seasoning because we like a lot of spice. I may have overcooked it a little (I cut the chicken into strips, so I didn't know how long to cook it.) One hint for cutting down on the messy fingers is to use one hand to pick up the soup-coated pieces and place them on a paper plate filled with the dry mixture, then use the other hand to roll the chicken and put it on the next plate. Both hands get messy, but at least they're not GOBBED with batter.

Cousin Cosmo's Greek Chicken

Very yummy and very easy to make. I wasn't in the mood for a tomato the night I tried it, so I left it out, and it tasted wonderful. I also used frozen spinach instead of fresh (about 1 cup), and it worked fine.
