Cranberry-Jalapeno Relish

This summer I made this for a family reunion. It was a hit for little effort. The one's who raved about it made others curious to try it. Several people wanted the recipe. Most of us like spicy! I think this is better made 2 days ahead to absorb all the flavor and juices. Secret, I added a Tablespoon of Captain Morgans Spice Rum and some lime zest.

Vinegar Cookies

I didn't have time to go to the store and needed a recipe in a hurry. These were quick and easy to make. The walnuts I chopped rather small, so they were more like sandies. Next time, I will chop the walnuts a little more coarse. No comments except they were very sweet, but they were eaten all up! Thanks for the recipe.

Stuffed Pepper Soup I

I was looking for a quick and easy recipe to use with ground beef and bell pepper that I needed to use or lose. This fit the bill. I only left out the Sugar and added onion and garlic powder. Thanks for the recipe.

Pretty Chicken Marinade

This is so good! I've tried several marinades, but this is at the top of my list. I keep a big jar in the fridge. To make meals convenient during a busy week, I'll marinade some lean beef, pork, and chicken overnight. Then it is grilled and sliced to use during the week in recipes or salads. (This also helps us cut down on eating out as much and helps to control the fat and salt). Thanks for this recipe!

No-Fuss Meat Loaf

Thanks for sharing this recipe! A great start to basic meat loaf without the fuss. No matter what you add to it, it turns out good. We make extra so we can have meatloaf sandwiches duing the week for lunch. I often use 1 lb each Ground beef, chicken, and breakfast sausage to 4 eggs and a chopped onion, a can of rotel tomatoes or salsa, some garlic and onion powder, italian seasoning or sage. Shape into six mini loaves on a baking sheet with a lip and bake 1 hour. The last 10 minutes brush with a little bbq sauce OR a mixture of Ketchup, mustard, and little brown sugar. Served with Rice or potatoes, or or even spaghetti.

Mexican Bean Salad

I loved this recipe, so I doubled it and took it to a party of mainly 20 to 30 year olds. It did not go over well at all. I guess they were more of a burger and pizza crowd. Took it home and used it with burritos and wraps all week long, and made chili with the rest. Yum. Next time I will not double and try it with an older crowd.

Amy's Cilantro Cream Sauce

I thought I would really like this as a dip but was dissapointed. I did use it as a spread in a tortilla wrap with turkey, and loved the taste. I may try it again as suggested for fish. For this reason I gave it a 4.

Pumpkin Bread IV

I made this for Thanksgiving and it went over well. It gets even moister after a few days making it a good recipe to make ahead of time. This recipe also made a good base for Banana Nut Bread Substituting 3 cups Pureed Banana. And I added 1 1/2 Tsp Vanilla, 1 tsp Banana Extract, and 1 1/2 c. chopped walnuts. It made 10 mini loaves and of course, we had to try one now and it also was moist and good.

Amazingly Good Eggnog

Yummmmm. Great consistency and spiced well. I will reduce the sugar next time as it was a little sweet for my taste. I left out the rum so the kids could drink it though I added a jigger of Morgan's Spicy Rum to my glass. Ohhhhhh my gosh. This is a keeper. Thanks!

Quick Sunshine Cake

This is a YUMMY light cake for summer also suitable to serve at a baby or wedding shower. When making the frosting, I first mixed together the pudding mix and undrained pineapple, then folded in the whipped topping without over mixing. Next time I may add a little orange zest.
