Health Nut Blueberry Muffins

This is a fantastic recipe that contains so many "good" healthy ingredients and yet is very low fat and still manages to stay so moist and lovely. I found it when searching for a recipe for blueberries and was very impressed! This will be a recipe I use over and over again. I made this recipe exactly as stated but I am certain it would work with other diced fruit equally as well.

Shrimp Scampi Bake

I was greatly anticipating this recipe as it contains all the ingredients that my husband and I love. I was very disappointed at the lack of flavor---it would need lots of addition "zip" to rate a better rating. I followed the directions exactly except for adding a small splash of white wine. It just did not do it for me. Sorry! I usually agree with the majority of the raters of any recipes I try but this is the first time I sadly disagree.

Baked Apricot Chicken

I tried this last night for just my husband and myself for a quick, easy dinner in the midst of busy Christmas preparations. I cut the recipe down for a smaller number of servings and used boneless, skinless chicken breasts. It was super easy with minimum of preparation AND it was soooo delicious! I just put a couple of potatoes into the oven to bake at the same time, and added a quick tossed salad and some buttered corn and we had a beautiful and extremely delicious dinner. This is definitely a "keeper" that is very good, produced very moist and flavorful chicken, and is worthy of being served as a company meal.

Mrs. Sigg's Snickerdoodles

In searching for a new cookie recipe I stumbled across this recipe for Snickerdoodles. They have a fabulous flavor, are simple to make, keep well in the cookie jar and appeal to everyone. Eating them brought back memories of my first Snickerdoodles back in the 60s. Thanks for a great recipe and memories of a cookie I had not thought about or baked in many, many years.

Stephanie's Freezer Spaghetti Sauce

We loved this recipe and were able to use lots of our fresh garden tomatoes. I made it as outlined except added a full can of tomato paste, a few sliced mushrooms and a little extra seasoning (we like ours spicier). It was great! I even added a few partially cooked meatballs halfway through the cooking time. I made the recipe to eat right away. Now that I have found out how good it is and how easy to make, I will make a few more batches to freeze.

Mama's Best Broiled Tomato Sandwich

This is a fabulous yet simple recipe. It tastes just wonderful this time of the year with fresh garden tomatoes. I am sure you could adapt it to make small appetizer-sized sandwiches by using toasted French bread baguette slices or cutting toasted regular bread slices into quarters. You could perhaps dice the tomatoes to make eating a little easier on these smaller portions. Seasonings can be adjusted easily to individual tastes. This recipe is a definite "keeper". Great recipe!

O'Brian's Potato Casserole

I used this recipe for a brunch served the morning after my daughter's wedding. It was very successful---I heard only positive comments. I followed the recipe except cut back on the amount of melted butter and cut the amount of shredded cheese in half. I think you could add some chopped chive to further enhance the flavor. It is a "definite" to make it to my regular recipe box . . . even the bride asked for the recipe.

Black Forest Mini Cheesecakes

These are just an excellent "make ahead" dessert. I made them for a bridal shower and a gathering of my husband's co-workers. Everyone loved them! Any time you can make food items ahead of time always adds to the convenience. These have the added advantage of tasting wonderful also.

Roasted Asparagus and Yellow Pepper Salad

I just made this for the second time and it has gone over fabulously with all of my dinner guests. I love that it can be made ahead of time. My family raved about it at Easter and last night I served it to 14 of my husband's co-workers. It was great! My only change was to hold back a little of the hot sauce in fear that perhaps some of my guests did not like things quite so spicy/hot. It is a fabulous dish to make ahead of time for a party and reserve a few toasted almonds to sprinkle on the top just before serving. I also used both red and yellow peppers to add additional color. If it hadn't been raining I would have grilled the vegetables outside instead of oven roasting for additional flavor. This is definitely a "keeper", and even worth paying a little extra for asparagus when not in season.

Sweet Dinner Rolls

Everything good said about this recipe is ABSOLUTELY TRUE. My family noticed the improvement on the first bite. It has replace my previous "favorite" dinner roll recipe and will be made over and over again. I followed the recipe exactly as printed and they were so good. I'm going to make them for company tomorrow night.

Russian Black Bread

This is just an excellent and easy recipe. The bread is light, moist and seems to stay fresher much longer than many other recipes I have tried in my breadmaker. I also used the ends (crusts) to make some truly delicious croutons to be used in soups and salads. I made the recipe exactly as stated and was very happy with the results. I will definitely use this one again and again.

Colorful Corn Chowder

This is an EXCELLENT recipe! My only changes were to use lower fat evaporated milk instead of half and half and to add a little extra liquid. I found it a little too thick for my family's liking otherwise. Rich and flavorful and tastes even better the second day. A real KEEPER!

Sour Cream Coffee Cake I

I made this for brunch this week-end and it was a very, very popular addition to my usual egg casserole, fruit salad, greens salad, and assorted meats menu. It is easy to prepare, light to eat and looks very "special" when cooked in a fluted pan. Even my two-year-old granddaughter really enjoyed it. It stayed nice and moist and the glaze was just the right amount of topping for a breakfast entree. You could easily add a few chopped nuts (pecans, walnuts, hazelnuts) to the cinnamon mixture, if desired. I highly recommend this recipe both as a breakfast/brunch item or a dessert item.

Honey Roasted Red Potatoes

This is an excellent recipe which I have made twice recently. It was a hit at my Father's Day brunch and again at a Canada Day dinner. It received raves by all my guests at both functions. I did stir and baste the potatoes more frequently than the recipe calls for and they got a lovely golden color with a beautiful sweet glaze. They are an excellent side dish for just about any kind of meal. It is my new most favorite potatoes recipe. Try it---you'll like it!

Blueberry Crisp I

I made this recipe using saskatoon berries, which are very similar to blueberries but now quite as soft. It turned out excellent, and my dinner guests all raved about it. I served it warm with frozen yogurt or vanilla icecream. I would like to try it again with another type of fruit. I especially appreciated that it is mad in a 9" pan. There are only three in our family and I don't like to have lots of leftover dessert. This was a perfect size for a dinner party for 6. I will definitely keep and use this recipe over and over again.

Deep Dish Layered Salad

As stated many times over previously . . . this is a FABULOUS recipe. My family all loved it. I cut it in half and it was just enough for 8 people as a side dish. I didn't change a thing but my curry powder wasn't the freshest so would probably add a bit more next time. It is great to have these recipes for food items that can be made ahead of time . . . they are such time and nerve savers when entertaining.

Sloppy Joes II

All the raves about this recipe were true. I made it the day before I needed it for an informal family birthday celebration. I doubled the recipe thinking I could freeze half for later use . . . foolish me--it was so popular we ate it all! The best thing about it is it's simplicity and can be made lower fat by draining meat throroughly after browning. I highly recommend it (and so do the six other members of the family who ate it.)
