Pork Medallions
Fabulous. Didn't have any fresh mushroom, so I used canned. There were no leftovers.

Stuffed Mushrooms
I thought these were okay. My daughter really liked them. I'm not a big fan of balsamic, so I cut that in half.

Artichoke Chicken
Loved this. Did as others and used 1/4 mayo and 1/2 sour cream. I had thick pieces of chicken, so it took longer than 30 minutes, about 1 1/4 hour for the chicken to cook through. Next time I will pound the chicken a little thinner to cut down on the cooking time.
