Pistachio Thumbprints

Got rave reviews for Christmas last year. They add some nice color to the tray. Made just as the recipe states. My oven seems to cook hot so I had to watch them. They were the first treats gone off the tray and ended up making a second batch since my brother kept going on and on about how awesome they are. This year when my SIL asked what kind of cookies he wanted, he said "Nothing but those pistachio cookies my sister made last year." Definitely a permanent addition to my Christmas cookie list.

Salsa Chicken

This is on a regular rotation at our house, and has been for years. Serve it with Cornbread and salad for a quick and easy weeknight meal. The chicken always turns out moist. I just liberally sprinkle taco seasoning on both sides without measuring.

Instant Pistachio Salad

Always on my Thanksgiving menu. Make it exactly as the recipe states with a Lite Cool Whip to make it sort of "healthy".

BLT Pasta Salad

I think this is tasty but have taken it to a couple of potlucks and come home with a pretty full bowl. I'm not sure if it doesn't look appetizing or if it just doesn't taste good to others.

Baked Pork Chops I

FANTASTIC! Followed the recipe exactly. Have made it numerous times. The only time it didn't turn out perfect was when I bought super thick pork chops (couldn't tell in the packaging.) Just had to cook longer so dried them out a bit. I have made this for numerous house/dinner guests and get asked for the recipe every time.

Mrs. Sigg's Snickerdoodles

Just a little crisp on the outside but soft and chewy on the inside. Perfect! They also freeze very well. Just wrapped 2 together in Freezer Saran wrap and placed all in a freezer bag. They tasted just as good after a few weeks in the freezer as they did fresh out of the oven.

Peanut Butter Cup Cookies

These are delicious and are a huge hit wherever I take them. If I'm really being lazy, I just use refrigerated PB cookie dough. Quick & Easy & Tasty!

Roasted New Red Potatoes

This is how I usually make my potatoes. 1/4 olive oil seemed a bit much as my potatoes were swimming in it. Added a little more salt and pepper and also some garlic powder and oregano. Cut potatoes in 1/4's since they were a little bigger and cooking time was about 30 minutes. Crispy on the outside and soft and moist on the inside.

Stuffed Pork Chops III

I adjusted the servings to 6 and made accordingly. My first bite was salt overload! I think I could've have used the original amount of salt and pepper, and that might have been a bit much. However, my guests raved about it, so I did 4 stars. I simmered for 5 minutes longer since it took a few minutes for my "sauce" to get to a simmering point. I used a whole can of beef broth and a whole can of condensed French Onion (split between two pans). Also added some flour at the end to make a gravy of the sauce. The flavor was excellent and the pork tender. Just next time I'll use much less salt and pepper.

Juicy Butt Steaks

I'm always trying to find a good recipe for pork steak since I always buy it on sale. This made the most tender tasty meat ever! My husband said the sauce was delicious and was shocked when I told him it was ketchup. I have even used this recipe to make shredded pork for sandwiches and mixed it with a little BBQ sauce before serving.

Guacamole

The flavor is good, but a little bland. Great "Americanized" guacamole. We added tons more garlic and cayenne pepper and it was still lacking the spice we wanted. I'll make it again, but next time add some chopped up jalapenos and cut down the lime juice as well.

Spicy Chicken Enchiladas

I thought these were good and easy to make. I used canned jalapenos instead of fresh. It makes a lot of filling so I froze 1/2 of it to use later and it made for a quick 2nd dinner.

Thai Chicken Pizza with Carrots and Cilantro

Phenomenal!!! I made my own pizza crust (Jiffy from a box) and added some garlic powder and ground ginger. Added a little lime juice to the peanut sauce to cut down on the sweet flavor a little. 2 med carrots was plenty but lots of cilantro makes it even better. I will definitely make this up as an appetizer!

Pork Chops for the Slow Cooker

Good flavor. Not really enough sauce/marinade and I only used 3 chops. I cooked on low for 4 hours and they were borderline dry. Next time, I'll cook for 3-3.5 hours and add some dark beer.
