Amazingly Easy Irish Soda Bread

Guinness® Corned Beef

Yummo! This was amazing. My guests said the best they've ever had and oh so easy. I used 2 cans of Guiness and cooked for 6 hours for high in the crock pot. So tender and flavorful.

Seared Scallops with Orange-Basil Sauce

This turned out really good. One of my fav dishes at a local cafe is orange seared scallops, this was better! I used double the orange juice (wanted a good amount of sauce for pasta) and put the scallops in with the sauce maybe 5 minutes. This was great over angel hair pasta with lots of fresh grated parmesan to up the creaminess. A new favorite dish, will be great for company!

Ultimate Maple Snickerdoodles

A great snickerdoodle recipe being that I didn't have any cream of tartar. My husbands new fav cookie. You will not taste maple in this cookie, just the right amount of sweet. Also used cin/sugar to roll in b4 baking. yummo

Focaccia Bread

I added the extra salt as other reviewers mentioned, don't do it, way to salty! Otherwise the flavor was great, next time I will stick with the original recipe. I also proofed the yeast (110 degree water, sugar and yeast for 10 min). Good stuff and easy too!

Brandied Pepper Steak

Really good, not good for you, but tasty. My brandy never did flame up (dern) but the sauce was really good. I sliced the steak then drizzled the sauce over it for a nice presentation. Definately a special occasion dish due to high fat content.

Buttery Spritz Cookies

These are really good and easy to work with. So happy to find a tasty spritz cookie recipe where the cookies actually stay soft. Yay! I added a tad more vanilla for flavor and of course lots of sprinkles!

Baked Whole Cauliflower

Really good! I love cauliflower and this was a nice change versus all of the cheese-sauce recipes, gross. Could be low-fat if you sub olive oil for butter. Will make again. Oh, and I made it in pieces versus the whole head for ease.

Fish Tacos

Really lite and satisfying. Never had an S.D. taco, but next time I'm down there, on it! I used red snapper and it worked great. Excellent sauce and good batter. Tasty stuff.

Easy Chocolate Bundt Cake Glaze

Soo good and easy to make! Great cuz I didn't have corn syrup, but very happy! Made this with Scharffen Berger chocolate for a bundt cake, excited to use the leftovers, tasty.

Creamy Potato and Leek Soup

Very good! Very rich and even cheesy. To avoid the texture of the leeks I put the mixture in a blender save a cup or so of some smashed potatoes to give it a little body. I added a little onion and garlic to the leeks when they were sauteing (butter vs. margarine) as well as a bit more broth to the mixture and some salt and pepper. Very rich and yummy with the cream!

Sauteed Swiss Chard with Parmesan Cheese

Really good. Tho this is the first time I have made swiss chard, it is one I will stick with in the future. I just used chicken broth versus wine (none on hand) and it was great! Recommend a good parmesan cheese for depth/flavor. tasty
