Quinoa and Black Bean Chili

I left out the zucchini, cilantro, and chipotle but added a serrano pepper. Topped with mashed avocado instead of cheese. I will definitely be making this again.

I made these with whole wheat pastry flour, raw sugar, apple sauce instead of oil, egg replacer, soy milk, soy butter and they were still fabulous!

Marinade for Chicken

WONDERFUL marinade. Honestly, I did not have dry mustard on hand so I used prepared. Also, did not have parsley so it was omitted. I hate when people make changes to the original recipe and rate it anyway but here I am doing it.

Chicken Florentine Casserole

Following the exact recipe, 4 stars. I made it a second time following others' suggestions, 5 stars! Do NOT use canned spinach. I used frozen and it was SO much better. Chopped chicken and fried in skillet as well.

Skillet Bow Tie Lasagna

Really good and easy. Not quite as good as the real thing but close and SO MUCH easier. Thought the taste was great. Made exactly as instructed except used large curd cottage cheese instead of small curd and whole wheat penne pasta instead of bowtie. We will definitely be having this dish again and again. Thanks.

Mom's Best Peanut Brittle

Great brittle. I made a few changes. I used 1.5 cups pumpkin seeds instead of peanuts. Just needed a change from the usual roasted seeds after pumpkin carving! I made it with dark corn syrup instead of light as that was what I already had. Also, I did mine in the microwave for about 9 minutes and not on the stove.

Cabbage Roll Casserole

This was really good. I made it according to the recipe except that I used only one head of cabbage which is not 3.5 pounds. Next time I will use more cabbage as the recipe says. I was able to split the recipe in half, serving one dish one night and saving the other in the freezer for another day. I didn't even thaw the frozen one. I simply cooked it (same temp) for 1 hour, stirred, and cooked for another hour instead of the half hour. THanks for a great meal.
